Lucky Goat Coffee is a specialty coffee production roaster based out of Tallahassee, Florida and making waves nationally. The Assistant Baker position will be responsible for assisting our Head Baker execute daily operations within the bakery including, but not limited to, ingredient preparation, inventory management, equipment prep & maintenance, quality control, and maintaining good food safety sanitation standards. This position will start in a part-time capacity, increasing to full-time August 2026.

Requirements

• Degree in hospitality, culinary arts, or equivalent work experience.
• Minimum of 2 years of baking experience.
• Ability to permanently reside in Tallahassee, Florida.
• A genuine passion for creating the highest quality baked goods.
• Strong communication, time management, and attention to detail are a must.
• Extensive professional experience with commercial ovens, mixers, and other baking equipment.
• The ability to walk and stand for the majority of each shift and to lift up to 50 pounds.
• Demonstrated excellence in strategic thinking and process creation. Open to new perspectives to achieve overall vision and company goals.
• The ability to work and thrive in a fast-paced, rapidly changing work environment.
• Availability to work Saturday/Sunday shifts if needed.

Responsibilities

• Assist the Head Baker to ensure that the baking schedule is efficient and meets customer demand.
• Measuring and preparing ingredients and other necessary components accurately. This may also involve sifting, mixing, and blending ingredients.
• Maintain high-quality standards by inspecting baked goods for appearance, taste, and texture. This involves identifying and addressing any issues or inconsistencies.
• Track inventory levels for all bakery ingredients and notifying the head baker when supplies need to be reordered.
• Help implement and maintain food safety and food quality plans including good manufacturing practices (GMP) and best practices.
• Ensure bakery appearance and cleanliness is always maintained to align with all health codes and food safety regulations.
• Collaborate with the Head Baker to develop and test new recipes and products that align with the bakery's brand and customer preferences.
• Commit to effective teamwork with the Head Baker and other Lucky Goat Coffee staff to ensure a cohesive and efficient operation.
• Perform regular cleaning, repair, and maintenance of kitchen equipment to ensure a safe, sanitary operation and to achieve the maximum operational life.
