Overview of the role:

The Quality Assurance (QA) Technician is responsible for supporting food safety, quality, and regulatory compliance within the commissary operation. This position performs routine inspections, monitors production processes, verifies product quality standards, and ensures compliance with HACCP, GMP, and company food safety programs. The QA Technician works closely with production teams to identify and address food safety and quality concerns while maintaining accurate documentation and supporting continuous improvement initiatives.

Key Responsibilities:

• Perform daily food safety and quality inspections throughout the commissary.
• Monitor and document food, equipment, and storage temperatures.
• Verify compliance with HACCP, GMPs, SOPs, and company food safety procedures.
• Conduct pre-operational and sanitation inspections.
• Verify proper handling of raw fish, seafood, rice, and ready-to-eat products.
• Monitor allergen control programs and product labeling requirements.
• Inspect incoming ingredients for temperature, quality, condition, and proper labeling.
• Verify finished product quality, packaging, date coding, and storage compliance.
• Maintain accurate food safety, quality assurance, sanitation, temperature, production, and traceability records.
• Identify food safety or quality issues and collaborate with production teams to implement corrective actions.
• Assist with product holds, traceability exercises, mock recalls, and customer complaints.
• Support food safety training programs and continuous improvement initiatives.
• Communicate food safety and quality concerns promptly to management.
• Follow all company policies, safety procedures, and regulatory requirements.

What you'll need:

• Previous experience in food production, quality assurance, food safety, restaurant operations, or a related field.
• Strong attention to detail and organizational skills.
• Basic knowledge of food safety and sanitation practices.
• Ability to work effectively with production and kitchen staff.
• Strong written and verbal communication skills.
• Ability to accurately complete paperwork and electronic records.
• Ability to work in a cold/refrigerated food production environment.
• Ability to stand, walk, and move throughout the production area for extended periods.
• Flexible schedule, including weekends as needed.

Education & Experience:

• HACCP Certification or related training.
• Food Protection Manager Certification.
• Experience working with sushi, seafood, raw fish, or ready-to-eat foods.
• Experience in food manufacturing, quality assurance, traceability, regulatory compliance, or food safety inspections.
