El Jefe De Equipo De Back Of House
El Jefe de Equipo de Back of House es responsable de liderar la ejecucin de turnos en la cocina, garantizando la excelencia en calidad de alimentos, seguridad alimentaria, rapidez y precisin. Este puesto se encarga del rendimiento en tiempo real durante su turno, dirigiendo a los miembros del equipo, manteniendo estndares y ofreciendo resultados consistentes. Este puesto est altamente enfocado en operaciones y liderazgo, sirviendo como puente entre los Directores de BOH y los miembros del equipo, al mismo tiempo que refuerza sistemas, el rendimiento del coaching y protege la marca Chick-fil-A.

- Director de Liderazgo y Mantenimiento del BOH
- Director de Seguridad Alimentaria y Calidad Alimentaria del BOH
- Directores Adjuntos del BOH (segn corresponda)
Propsito principal:
Liderar el Back of House durante los turnos con excelencia, asegurando que los alimentos sean seguros, de alta calidad, precisos y entregados con rapidez mediante un liderazgo fuerte y una ejecucin disciplinada.

- El BOH lder cambia con claridad, urgencia y responsabilidad
- Aplicar estndares de seguridad y calidad alimentaria sin concesiones
- La conduccin resulta en velocidad de servicio, precisin y rendimiento
- Entrena y desarrolla a los miembros del equipo en tiempo real
- Mantn un ambiente de cocina limpio, organizado y eficiente
Responsabilidades directas:
1. Liderazgo y ejecucin de turnos
- Liderar y dirigir a los miembros del equipo BOH durante los turnos asignados.
- Asigna puestos y ajusta el personal segn el volumen y la demanda.
- Asegrate de que la cocina fluya y se comunica con la FOH.
- Toma decisiones en tiempo real para mantener la velocidad, precisin y eficiencia.
2. Normas de calidad alimentaria
- Asegrate de que todos los productos cumplan con los estndares de Chick-fil-A en cuanto a sabor, apariencia y precisin.
- Controla la porcin, la adherencia a las recetas y la consistencia en la preparacin.
- Realiza controles de calidad durante todo el turno.
- Aborda los problemas de calidad de inmediato mediante entrenamiento y correccin.
3. Seguridad y cumplimiento alimentario
- Asegura el cumplimiento total de los procedimientos y normas de seguridad alimentaria.
- Controla los tiempos de espera, las temperaturas y la manipulacin adecuada de los alimentos.
- Asegurarse de completar las listas de verificacin de seguridad alimentaria requeridas (SDC, registros, etc.).
- Mantente siempre preparado para auditoras e inspecciones.
4. Entrenamiento y desarrollo de equipos
- Entrena a los miembros del equipo en tiempo real sobre el rendimiento y los estndares.
- Reforzar la formacin y la correcta ejecucin de los sistemas.
- Proporciona una retroalimentacin clara, directa y alentadora.
- Identificar a los miembros del equipo con alto rendimiento y apoyar el desarrollo.
5. Limpieza, organizacin y gestin
- Asegrate de que todas las zonas de cocina estn limpias, surtidas y organizadas.
- Mantn el uso y cuidado adecuado del equipo.
- Apoyar la reduccin de residuos y la concienciacin sobre el coste de los alimentos.
- Asegrate de que los traspasos de turno estn limpios y preparados para el siguiente equipo.
