Sushi Sake Boca is seeking an experienced, passionate, and dependable Sushi Chef to join our team. We are looking for a culinary professional with exceptional knife skills, extensive knowledge of sushi preparation, and a commitment to delivering consistently high-quality Japanese cuisine. Responsibilities
- Prepare a variety of sushi, sashimi, nigiri, specialty rolls, hand rolls, and other Japanese dishes according to restaurant standards.
- Ensure all fish, seafood, vegetables, and other ingredients are fresh, properly stored, and handled safely.
- Maintain consistency in food quality, presentation, and portion control.
- Demonstrate expert knife skills and proper fish butchery techniques.
- Prepare daily mise en place and ensure the sushi station is fully stocked before each shift.
- Monitor inventory levels and communicate ordering needs to management.
- Minimize food waste while maintaining high quality standards.
- Maintain a clean, organized, and sanitary workstation in compliance with health department regulations.
- Collaborate with kitchen staff, servers, and management to ensure efficient and timely service.
- Assist with menu development, seasonal specials, and new roll creations when requested.
- Train and mentor junior sushi chefs and kitchen staff as needed.
- Follow all restaurant policies, food safety standards, and sanitation procedures.
Qualifications
- Minimum of 3 years of professional sushi chef experience in a high-volume restaurant.
- Strong knowledge of sushi preparation, Japanese cuisine, and fish handling techniques.
- Excellent knife skills and attention to detail.
- Ability to work efficiently under pressure without compromising quality.
- Strong understanding of food safety and sanitation standards.
- Dependable, professional, and team-oriented.
- Ability to stand for extended periods and lift up to 50 pounds.
- Flexible availability, including evenings, weekends, and holidays.
- Food Handler Certification (or ability to obtain one).
