Sushi Sake Boca is seeking an experienced, passionate, and dependable Sushi Chef to join our team. We are looking for a culinary professional with exceptional knife skills, extensive knowledge of sushi preparation, and a commitment to delivering consistently high-quality Japanese cuisine. The ideal candidate thrives in a fast-paced environment, works well as part of a team, and takes pride in creating an outstanding dining experience for every guest.

Responsibilities

  • Prepare a variety of sushi, sashimi, nigiri, specialty rolls, hand rolls, and other Japanese dishes according to restaurant standards.
  • Ensure all fish, seafood, vegetables, and other ingredients are fresh, properly stored, and handled safely.
  • Maintain consistency in food quality, presentation, and portion control.
  • Demonstrate expert knife skills and proper fish butchery techniques.
  • Prepare daily mise en place and ensure the sushi station is fully stocked before each shift.
  • Monitor inventory levels and communicate ordering needs to management.
  • Minimize food waste while maintaining high quality standards.
  • Maintain a clean, organized, and sanitary workstation in compliance with health department regulations.
  • Collaborate with kitchen staff, servers, and management to ensure efficient and timely service.
  • Assist with menu development, seasonal specials, and new roll creations when requested.
  • Train and mentor junior sushi chefs and kitchen staff as needed.
  • Follow all restaurant policies, food safety standards, and sanitation procedures.

Qualifications

  • Minimum of 3 years of professional sushi chef experience in a high-volume restaurant.
  • Strong knowledge of sushi preparation, Japanese cuisine, and fish handling techniques.
  • Excellent knife skills and attention to detail.
  • Ability to work efficiently under pressure without compromising quality.
  • Strong understanding of food safety and sanitation standards.
  • Dependable, professional, and team-oriented.
  • Ability to stand for extended periods and lift up to 50 pounds.
  • Flexible availability, including evenings, weekends, and holidays.
  • Food Handler Certification (or ability to obtain one).
