Executive Pastry Chef

Overview Omni PGA Frisco Resort & Spa blends the warmth of Texas hospitality with refined comfort. Guests can unwind in one of 500 thoughtfully designed rooms and suites, or embrace the spirit of the Lone Star State in one of 10 private ranch houses. The resort features four shimmering pools, an adults-only rooftop infinity pool, the Mokara Spa and 13 unique food and beverage destinations. Responsibilities Direct and coordinate all pastry and baking preparation for all hotel outlets. Schedule production work for associates. Control all food costs and payroll. Purchase supplies. Coordinate production of all baked goods and dessert items ordered by outlets. Complete any special requests ordered by outlets or other departments. Ensure the work area is clean and clear of standing water, debris or any objects that can obstruct the job duties from being performed safely, efficiently and effectively. Participate in Moments of Service Audit Program. Respond to reasonable requests of management as directed. Assign daily duties. Maintain attendance tracker. Maintain an organized kitchen. Train all pastry associates. Adhere to all health department and Ecosure standards. Ensure all banquet items are accurate to the BEO and displayed attractively. Write menus for baked and sweet items for all outlets and banquets seasonally. Assist with the Amenity Program in conjunction with the Chef de Cuisine seasonally. Drive for results and demand high quality. Stay current on food trends and modern pastry design. Comfortably talk to guests and associates. Lead demonstrations at the hotel and/or possible media outlets. Participate in pastry competitions. Qualifications Must have flexible availability, including weekends and holidays. Ability to lift up to 25 pounds with ease. Walking, stooping, standing, bending and sitting; possibly for more than 1 hour. Ability to communicate orally and in written form, in English.
