Position Title: Lead Cook (All F&B outlets)

Reports To: Restaurant Sous Chef

Supervises: N/A

Summary of Position

Assists in the general production of the restaurant kitchens shift and operation .

  • Reports all guest complaints and compliments to Supervisor or Manager.
  • Reports all situations to Supervisor or Manager where resort grounds or equipment do not meet IMGR&C standards.

  1. Essential Duties and Responsibilities include the following and are subject to change at management’s discretion:
  • Checks inventory and orders supplies as needed.
  • Makes sure that the outlets are open on time.
  • Checks, prepares and restocks food stations to par with food and supplies.
  • Follows recipes to portion standards.
  • Maintains food quality by inspecting freshness, expiration dates, temperatures and rotating food items according to First In-First Out.
  • Requests and inventories needed items for ordering. Communicates food shortages and needs after running out.
  • Makes sure all team members are performing line duties at maximum speed and efficiency.
  • Trains and monitors kitchen team members on job tasks.
  • Must be able to fill out daily forms such as transfers and waste sheets.
  • Reports any food not of usable quality to the Management after discarding.
  • Maintains a clean and sanitized work area.
  • Maintains quality in all food preparation while monitoring production to avoid waste.
  • Directs, supervises, coaches and disciplines kitchen staff during assigned shift.
  • Prepares all food and supplies in a timely manner as directed by the Chef or Sous Chef.
  • Assists kitchen staff as needed.
  • Performs other duties as assigned.

  2. Education and/or Experience Requirements

  • High school diploma or general education degree (GED); five years job-related experience in high volume cooking for a full production kitchen, two years of which is supervisory experience or a lead position. Equivalent combination of education and experience may be substituted. Must supply own work tools. Must occasionally lift and/or move up to 100 pounds.

While performing the duties of this position, the team member is frequently required to stand, walk, use hands, to finger, handle or feel, reach with hands and arms, stoop, kneel, crouch, or crawl, talk or hear. Must be able to use hand held communications devices. The team member must occasionally lift and/or move up to 50 pounds. The team member must be able to stand for several hours.

The noise level in the work environment is loud. The team member will be exposed to a second-hand smoke-filled environment. The team member may be exposed to biohazardous fluids such as blood and other body fluids. The team member may be exposed to hostile environments with guest. May be subject to high stress environments.
