JOB DESCRIPTION

The Dishwasher/Kitchen Steward is responsible for the cleaning, maintenance, and sanitation of kitchen equipment and dishware, along with production areas. Daily duties include but are not limited to setting up or breaking down supplies and materials along with stocking staple goods, chemical stocking, and general cleaning. This position is responsible for the cleanliness of cutlery, utensils, and glassware items, and for the disposal of food and beverage refuse.

REPORTS TO Sous Chef

KEY RESPONSIBILITIES

• Ensure the cleanliness, organization, and sanitization of the kitchen area, back of house area, and storage areas, along with the carts and tables according to the cleaning schedule.
• Clean and sanitize all china, glass, silver, cutlery, and other dishware using the dishwashing machine
• Load and unload dishware from dishwashing machine and store properly.
• Clean and sanitize all pots, pans, and kitchen utensils using the correct cleaning and rinsing solutions.
• Help and create overall compliance with state and local Food Safety and Food Establishment health regulations.
• Safely set-up, clean, and utilize machinery to clean, polish, sort, and transport dishware; place damaged or excessively worn pieces in a designated area for repair or to be discarded.
• Clean and sanitize all kitchen equipment such as ovens, mixers, kettles, as well as kitchen drains, sinks, floors, and walls; dust, clean, sweep, mop all food production areas and hallways.
• Safely utilize and store all cleaning compounds, chemicals, and materials including soaking solution utilizing the correct protective clothing and Personal Protective Equipment.

QUALIFICATIONS & SKILLS

• High school diploma or equivalent preferred.
• Related experience in a kitchen setting is preferred but not required.
• Must be 18 years of age or older.
• Must have an extensive knowledge of Food and Beverage etiquette, guest relations, and service standards.
• Must have strong interpersonal skills to assess client needs, negotiate pricing, and provide overall guest satisfaction.
• Must be able to effectively deal with internal and external guests with a high level of patience, tact, and diplomacy.
• Must have a self-starting personality with an even disposition.
• Must be able to communicate well with guests.
• Must be willing to pitch-in and help coworkers with their job duties.
• Must have a thorough knowledge of Food and Beverage products, proper preparation, and presentation.
• Must have the ability to work in a team environment.
• Must be able to maintain professional status through interface with customers, management, and co-workers.
• Must be able to work flexible schedules, including but not limited to extended hours, irregular shifts, evenings, holidays, and/or weekends.
