Job Description
Line Cooks & Prep Cooks — Delphine Brasserie (Ace Hotel NoMad) LINE COOKS Delphine is hiring Line Cooks to join our opening kitchen team at the Ace Hotel NoMad, cooking under Executive Chef Jarett Brodie. We're looking for cooks with real line experience who can hold a station through a full, fast service in a new French brasserie. You keep your station tight, your mise en place dialed, and your communication constant.
What You'll Do:
- Set up and stock your station before every service
- Execute menu items to spec, with consistent timing and plating
- Keep your station clean and organized through the rush
- Follow all food safety and sanitation standards
- Communicate constantly with the kitchen team during service
Job Requirements:
- 2+ years line cook experience in a high-volume kitchen
- Strong knife skills and station setup instincts
- Comfortable working a fast-paced line
- Evening and weekend availability
- Team-first attitude and strong work ethic

PREP COOKS Delphine is hiring Prep Cooks to join our opening kitchen team at the Ace Hotel NoMad, working under Executive Chef Jarett Brodie. This is the foundation of the kitchen — you'll build the mise en place that every service is built on, in a new French brasserie where quality starts long before the first ticket.
What You'll Do:
- Wash, cut, portion, and prep ingredients to spec every day
- Follow prep lists, recipes, and portioning standards precisely
- Label, date, rotate, and store product to keep the walk-in tight
- Keep your prep area clean and organized through the shift
- Follow all food safety and sanitation standards
- Communicate with chefs so prep is ready before service
Job Requirements:
- Prior prep or kitchen experience in a high-volume restaurant
- Strong, safe knife skills and a feel for consistency
- Organized, reliable, and steady under a full prep load
- Daytime availability, with some evenings and weekends
- Team-first attitude and strong work ethic
