About Buddy & Son

Buddy & Son is a seasonal brasserie located inside PUBLIC Hotel on the Lower East Side. The restaurant features approximately 95 seats in the dining room, 35 at the bar, and a 60+ seat garden.

Our cooking is ingredient-driven and unfussy—sophisticated in sensibility, simple in execution, and built around great sourcing, seasonality, and classic technique. The menu takes inspiration from the great New York and European brasseries while remaining distinctly our own.

Our pastry program follows the same philosophy: recognizable, craveable desserts executed with precision and restraint. We are building a kitchen culture based on professionalism, consistency, organization, and respect.

The Role

We are seeking an experienced Pastry Cook to join our opening culinary team. This position will support the daily production and execution of the restaurant's dessert, pastry, and baking program.

The ideal candidate has strong pastry fundamentals, excellent attention to detail, and the ability to work independently while maintaining consistency across daily production.

Responsibilities include:

• Execute daily pastry and dessert production according to recipes and chef direction
• Prepare cakes, tarts, custards, creams, ice creams, sorbets, sauces, garnishes, and other dessert components
• Assist with bread, dough, and baking production as needed
• Scale and measure recipes accurately and maintain consistent yields
• Prepare and organize mise en place for service
• Plate and finish desserts according to restaurant standards
• Maintain consistency in flavor, texture, portioning, and presentation
• Properly receive, store, label, date, and rotate ingredients
• Maintain a clean, organized, and sanitary pastry station
• Monitor inventory and communicate product needs to the culinary team
• Minimize waste and properly utilize ingredients
• Follow all NYC DOH food-safety and sanitation requirements
• Support the broader culinary team when necessary

What We're Looking For

• 1–2+ years of professional pastry or baking experience preferred
• Strong pastry fundamentals and attention to detail
• Experience with restaurant dessert production and service
• Comfortable working with doughs, custards, creams, chocolate, frozen desserts, and baked goods
• Ability to follow recipes precisely and consistently
• Strong organizational and time-management skills
• Clean and efficient working habits
• Reliable, punctual, and professional
• Ability to work independently and manage a daily production list
• Comfortable receiving direction and feedback
• Genuine interest in pastry, baking, seasonality, and continued development

Experience in French pastry, restaurant pastry, brasserie, or similarly technique-driven kitchens is a plus.
