Shift: Part-Time, Must have at least 3 days of availability

Salary: $23.00/hr + tips

Work Location: San Diego, CA (Miramar)

Role Summary

The Prep Cook is responsible for preparing a variety of food at the Chef's discretion. The prep cook is limited in scope of responsibility when compared to the kitchen operation as a whole. The cook may operate one or a select few pieces of kitchen cooking equipment (Flat Top, Grill, Saute, Salads, and Pantry), and largely focuses on prepping items to be cooked. They prepare food items according to the recipes. They maintain a clean and sanitary work area. The prep cook is a fast-paced position that's essential for the kitchen to operate at the desired level. This position works under the direction of the Chef de Cuisine.

Job Responsibilities

• Prepare and cook a variety of meats, seafood, poultry, and vegetables using a variety of kitchen equipment and techniques.
• Know and comply consistently with portion sizes, cooking methods, quality standards and kitchen rules, policies, and procedures.
• Stock and maintain sufficient levels of food products at line stations to assure a smooth service for our guests.
• Maintain a clean and sanitary workstation.
• Collaborate with other kitchen staff and management to maintain effective product flow.
• Handle, store, and rotate all products properly.
• Assists in food prep assignments from Executive Chef, Chef de Cuisine, Sous Chef, and Lead Prep.
• Opens and closes the kitchen stations properly, assists others and following checklists.
• Understands and follows proper rules of hygiene and food safety measures.
• Embraces and fulfills the core values and culture of Cutwater Spirits.
• Labeling and stocking all ingredients on easily accessible shelves
• Washing, chopping, and sorting ingredients like fruits, vegetables and meats
• Measuring quantities of seasonings and other cooking ingredients
• Parboiling food, reducing sauces, and starting first steps in various dishes
• Cleaning dishes, washing cooking utensils and cookware, taking out the trash and sanitizing kitchen
• Adhering to all relevant nutrition and sanitary regulations and standards
• Keeping track of ingredient inventory and collaborating with other kitchen and management staff to order resupply
• Superior dexterity skills to operate cutting tools quickly and safely
• Other duties as assigned.
• Working knowledge of food and beverage industry back of house operations.
• Ability to manage responsibilities in a high-demand, fast-paced working environment.
• Ability to operate all equipment in the kitchen.
• Understanding of food properties and cooking methods.
• Able to follow detailed recipes and verbal instructions.
• Ability to maintain a Food Handler's certification.
• Ability to work a flexible schedule including nights and weekends.

Job Qualifications

• High school diploma or equivalent required.
• 2+ years prior prep and restaurant kitchen experience (preferred).
