Under general supervision, plans, prepares, serves, and documents nutritious meals and snacks for children enrolled in the PUMBC Child Development Center. Ensures meals are prepared in accordance with established menus, health and safety regulations, dietary requirements, and Child Development Center policies. Maintains a clean, organized, and sanitary kitchen and food preparation area and performs other related duties as assigned.

Scope:

The Cook oversees the daily operations of the Child Development Center’s food service program, including menu planning, food preparation, kitchen sanitation, meal distribution, food storage, inventory management, and required record keeping. The Cook is responsible for ensuring that all meals and snacks are prepared and served in accordance with Child Care Food Program (CACFP) guidelines, Alabama Department of Human Resources (DHR) regulations, health and safety standards, and all applicable public regulations governing food preparation, handling, and storage. The Cook maintains a clean, safe, organized, and sanitary kitchen environment and performs other related food service duties as required.

Key Duties and Responsibilities

1. Follow the daily menu provided by the Director, ensuring meals comply with USDA, DHR licensing, health department, and applicable food safety requirements.
2. Prepare nutritious, age-appropriate meals and snacks for enrolled children in accordance with established menus and dietary requirements.
3. Prepare approved substitute meals or food items for children with documented food allergies, medical restrictions, or other approved dietary needs.
4. Prepare and distribute meals and snacks to classrooms according to established meal and snack schedules.
5. Practice proper food handling, preparation, cooking, cooling, reheating, storage, and sanitation procedures at all times.
6. Maintain adequate food and kitchen supplies and communicate purchasing needs to the Director. Purchase food and necessary supplies as authorized.
7. Maintain accurate daily records of menus, meal counts, food production, substitutions, and other required food service documentation.
8. Maintain a clean, safe, and sanitary kitchen, pantry, refrigerator, freezer, and food storage areas in accordance with applicable regulations.
9. Wash, sanitize, and properly store dishes, utensils, equipment, and other items used in food preparation and service.
10. Monitor food inventory, expiration dates, temperatures, and storage conditions to ensure food remains safe and suitable for consumption.
11. Report equipment concerns, food safety issues, supply shortages, and other kitchen-related concerns to the Director promptly.
12. Attend required conferences, workshops, trainings, and professional development opportunities as needed.
13. Follow all applicable Alabama DHR licensing requirements, USDA regulations, health department requirements, and state and federal food safety standards.
14. Perform other related duties as assigned by the Director.

Employment Standards

Ability To:

Work cooperatively with staff, students, and vendors and maintain accurate records.

Knowledge Of:

Early Childhood nutrition; production cooking.

Minimum Qualifications:

Required Certification:
ServSafe Food Handler or Manager Certification

Education:

Graduation from High School or G.E.D.

Experience:

First Aide/CPR certification. At least 1 year experience production cooking. Experience in Child Care Food Program requirements and documentation preferred.

Special Requirements:

Must be able to perform physical activities, such as but not limited to, lifting heavy items (up to 50lbs.

unassisted), bending, standing, climbing and walking. Must pass fingerprint/background clearance test for all appropriate agencies (such as FBI, ABI and Child Abuse Neglect Services).
