The Campus Dining Dietitian/Nutrition Associate Manager serves as the strategic leader for nutrition, wellness, and student health initiatives across Eastern Kentucky University Dining. This highly visible role combines clinical expertise, program innovation, and campus partnership development to shape the student dining experience, advance wellness outcomes, and create a culture of health and belonging across campus.
As the campus nutrition expert, you will have the opportunity to develop impactful wellness programs, collaborate with university leadership, influence dining strategy, and provide personalized nutrition guidance to students, faculty, and staff. This role offers a unique blend of healthcare, education, business partnership, and community engagement within a dynamic collegiate environment.
Job Responsibilities
Campus Programming, Partnerships, and Education
- Lead the strategic development and execution of campus-wide wellness initiatives that enhance student success, retention, and overall well-being.
- Serve as a trusted advisor to university stakeholders on nutrition, food accessibility, and health promotion strategies.
- Create innovative educational programs, workshops, cooking demonstrations, and wellness campaigns that engage diverse student populations.
Food and Safety Oversight
- Serve as the primary subject matter expert for menu transparency, food allergy management, and special dietary accommodations.
- Collaborate with culinary leadership to design inclusive, innovative menus that support diverse dietary, cultural, religious, and lifestyle preferences.
- Drive continuous improvement initiatives focused on nutrition quality, student satisfaction, and dining innovation.
- Provide leadership and training to culinary and operations teams on emerging nutrition trends, allergen management, and student dietary needs.
Nutrition Consultations
- Provide individualized nutrition counseling and group education sessions that empower students to achieve personal wellness, academic, and lifestyle goals.
- Serve as a trusted resource for students managing food allergies, chronic health conditions, sports performance goals, and specialized nutrition needs.
Qualifications
- Bachelors or Masters Degree in nutrition, dietetics, or related field
- currently hold or are elegible for RDN credential
- 1+ years of experience in higher education, K12, foodservice management, wellness programming, sports nutrition, or related environments
- Demonstrated ability to leverage technology, nutrition analysis platforms, data insights, and digital engagement tools to drive programm success and enhance the student experience
- May be required to travel up to 15%
