Primary Responsibilities:

Supporting line cooks by completing the preliminary food preparation tasks and maintaining kitchen organization.
Execute daily prep lists efficiently and accurately, including washing, peeling, cutting and portioning ingredients according to specifications
Prepare basic components of dishes. Measuring accurately, following recipes precisely and maintain proper storage procedures for all prepared items
Maintain proper food storage, monitoring temperatures, dating items and ensuring first in first out (FIFO) protocols are followed
Assist with kitchen cleaning duties, sanitizing prep areas, and maintaining cleanliness of kitchen areas. This involves following detailed schedules and health department regulations
Required Skills:

Previous prep cook experience
Knowledge of kitchen equipment operation and maintenance
Basic math skills for recipe conversion
Physical ability to work in a fast-paced kitchen environment
Working Conditions:

Early morning shifts
Working with sharp objects and kitchen equipment
Temperature variations between coolers and kitchen
Standing and walking for extended periods of time
