The Registered Dietitian (RD) at San Quentin State Prison is responsible for planning, implementing, and overseeing nutrition services that support the health and medical needs of the adult incarcerated population. The RD ensures compliance with California Department of Corrections and Rehabilitation (CDCR) policies, Title 15 regulations, and evidence-based nutrition standards while promoting overall wellness in a correctional healthcare setting.
Key Responsibilities
Assess nutritional needs of patients, including those with chronic medical conditions and special diet requirements.
Develop, implement, and monitor therapeutic and medically prescribed diets.
Provide individualized and group nutrition education and counseling as clinically indicated.
Ensure menus meet nutritional adequacy, food safety, and regulatory standards.
Collaborate with medical, nursing, mental health, and food service staff to support patient care.
Document nutrition assessments, interventions, and outcomes in the health record.
Monitor food service operations for compliance with sanitation and safety requirements.
Qualifications
Bachelor’s or Master’s degree in Nutrition, Dietetics, or a related field.
Current Registered Dietitian (RD/RDN) credential.
Valid California licensure, if required.
Ability to work effectively within a secure correctional healthcare environment.
