Prep Cooks At Sea IslandPrep Cooks at Sea Island prepare recipes as listed on the Daily Prep Board or as directed by management and are cross-trained to perform at several positions in the restaurant to include:Breader - Prepares milk wash and a variety of breading materials, and breads fish, shrimp and oysters to keep cooks supplied.Pantry - Assembles wide variety of salads, side items and other menu items per guests' orders.Shrimper - Peels shrimp and assembles a variety of shrimp items to supply cooks throughout the meal periods.Fish Cutter - Hand-filets fish and cuts into various serving sizes according to recipe.Stocker – Responsible for putting newly received items in their proper storage area. Maintains cleanliness of all dry storage, refrigerator and general preparation areas of the kitchen.Shrimp/Oyster Station - Properly thaw, sort, peel, skewer and cook all shrimp products to daily par levels. Scrub & wash and ice down shell oysters for shucking.RequirementsProperly execute all recipes.Embrace teamwork within the Company, creating a positive work environment.Properly sanitize and set up station according to restaurant's guidelines.Maintain a clean, clutter free and organized station at all times.Maintain clean and organized food and other kitchen storage areas.Follow all company policies for dating, wrapping, rotating and storing of food product.Follow guidelines for daily operating procedures (line check, Station schematics, Waste Sheet)Follow production systems while utilizing stated pars.Break down and clean station at the end of the shift, follow daily cleaning list.Complete a positional training program with validation measures throughout.Adhere to all food safety and sanitation standards.Perform other job-related activities as required or assigned by manager.QualificationsMust be at least 18 years of ageReading SkillsStanding and walking during entire shiftAbility to reach, bend, stoop and lift up to 50 lbsAbility to work in a fast-paced environmentAbility to work accurately and under pressureTeam player with other employees
