About the Role

The Assistant Taquería Manager supports the Taquería Manager in planning, directing, and managing the operations and performance of the Taquería and La Isla departments. This role helps lead the team to deliver fresh, high-quality food, ensures compliance with Vallarta standards, and provides outstanding customer service while managing sales, labor, and expenses.

What You’ll Do:

• Leadership & Supervision: Assist in delegating and supervising employees, ensuring adherence to company rules, safety standards, schedules, and customer service excellence.
• Customer Service: Greet and serve customers with efficiency and courtesy, maintaining a clean and welcoming Taquería.
• Manager Support: Assume full responsibilities of the Taquería Manager in their absence, ensuring smooth department operations.
• Team Development: Train, coach, and recognize employees, enforce discipline when needed, and recommend promotions.
• Operations: Assist with writing weekly schedules, ordering inventory, reviewing invoices, and maintaining accurate records of sales, transfers, and purchases.
• Product Quality: Maintain consistency in quality, freshness, flavor, and appearance of menu items. Ensure food presentation standards are upheld throughout the day.
• Merchandising: Rotate and replenish items, maintain schematic standards, and ensure signage and storage conditions meet guidelines.
• Compliance & Safety: Enforce Vallarta’s Safety Program, correct unsafe acts, ensure food safety and sanitation compliance, and enforce dress code standards.
• Sanitation: Ensure cleanliness of food prep areas, counters, floors, and equipment.
• Other Duties: Perform additional tasks and assist in all areas of the Taquería department.

Physical Requirements:

• Stand and walk constantly (6–8 hours/day).
• Frequently bend, squat, twist, kneel, and reach above/below shoulders.
• Frequent use of hands for simple grasping, power grasping, pushing, pulling, and fine manipulation.
• Lift and carry up to 25 lbs. frequently and up to 30 lbs. occasionally (e.g., box of vegetables).
• Heaviest item carried: 25–30 lbs.; longest distance: 3 feet.
• Work in environments with temperature and humidity changes.
• No regular operation of vehicles or heavy machinery required.

What We’re Looking For:

• Knowledge of preparing and cooking authentic Taquería foods.
• Familiarity with professional equipment, tools, and ovens.
• Strong leadership and communication skills.
• Ability to train and coach employees in a fast-paced environment.
• Must successfully pass food safety certification every 3 years.
• Strong math and problem-solving skills.
• Prior culinary trade experience preferred.
• Must be able to speak, read, write, and understand English.
• Must be legally authorized to work in the U.S.

• Fast-paced retail Taquería setting with direct customer interaction.
• Exposure to perishable products, cooking equipment, and changing conditions.
