We're a group of employees who care about not only what we do but how we do it.About the Role: As a Butcher II in one of our meat departments, you will have the opportunity to produce high quality meat cuts and seafood products for our customers.Who You Are: You are looking for a way to utilize your knowledge and experience in meat and seafood to serve our customers and provide them with guidance and information regarding meat and seafood. You're passionate about working in an organization that values and promotes diversity, equity and inclusion.What You'll Do: You will lead the efforts to create an exciting product selection at our meat and seafood counter, researching new items and adding recipes as determined in conjunction with the Meat Department Manager and Purchasing department. In addition, you'll collaborate with other members to support the following areas:Cut, trim, bone, tie, and grind meats, such as beef, pork, poultry, and fish, to prepare meat in cooking formShape and tie roasts use a boning knife and twineCure, smoke, tenderize and preserve meatAssure a safe, efficient, and clean meat department, adhering to safety and cleanliness standards.Stay abreast of industry trends, natural and organic practices, recalls and warningsOrder product using SMS as needed, working with the Meat Manager to maintain proper inventory levelsAdhere to proper receiving protocols that ensure delivery quality and accurate quantities per invoiceComplete inventory and enter product loss into SMS according to established procedures and time framesMaintain effective working relations with suppliersWork closely with the Logistics staff to ensure accurate data management including inventory numbers, ingredients, recipes and correct pricingAssist as needed with daily operations, routines, and procedures. Record quantity of meat received and issued to cooks and keep records of meat transfers.Effectively use all department equipmentComply with all laws, rules and regulations pertaining to the meat departmentAssist with preparations for Wisconsin Department of Agriculture, Trade and Consumer Protection and other inspectionsMaintain daily temperature and production logs accuratelyGreet and offer assistance to customersTreat people fairly, consistently and with respectKnow product locations in order to assist customers in finding what they need throughout the storeAbide by all Co-op policies and procedures as outlined in the Employee Handbook and other company documentsParticipate in required training and meetingsPerform all other duties as assigned by a supervisorWhat You Bring: This role requires the following education, experience, skills and abilities:At least 2 years of experience as a ButcherKnowledge of grades of meatKnowledge of HACCP plan and Servsafe principlesA positive attitude and collaborative spiritOutstanding customer service skillsWillingness to be open, to learn and take on new responsibilitiesRegular, predictable attendanceEffective communication skills in EnglishAbility to read and comprehend instructionsDemonstrate accuracy and thoroughnessAbility to work independentlyAbility to work in a fast-paced environmentAbility to handle multiple demands and adhere to deadlinesNice-to-Haves: It's a bonus if you have one or more of the following:Previous experience with seafoodEducation or training in meat cutting, butchery, or other culinary fieldPrevious experience working in a co-operative structureWhat You'll Get: Willy Street Co-op is one of Madison's best-kept secrets in terms of a great place to work.
