Seafood Prep & Line Cook — Fast-Paced Kitchen

Position Summary The Prep Cook is responsible for preparing ingredients, handling seafood, and supporting kitchen operations to ensure all stations are stocked, organized, and ready for service. This role plays a critical part in food quality, consistency, and kitchen efficiency by ensuring all prep is completed accurately, safely, and on time. This is a hands‑on role requiring attention to detail, speed, and adherence to food safety standards. Essential Duties and Responsibilities Food Preparation Prepare ingredients according to recipes and kitchen standards Wash, cut, portion, and store vegetables, proteins, and other ingredients Follow prep lists and daily production schedules Ensure proper portioning and consistency Clean, cut, portion, and prepare seafood as required Follow proper thawing, storage, and handling procedures Ensure seafood is fresh, properly labeled, and stored correctly Maintain awareness of product quality and report any issues Food Safety & Sanitation Follow all food safety and sanitation procedures Ensure proper labeling, dating, and FIFO rotation Maintain proper temperature control of all products Prevent cross‑contamination and unsafe food handling Maintain personal hygiene and cleanliness at all times Keep prep areas clean, organized, and stocked Assist with receiving and storing deliveries Ensure all ingredients are properly stored and accessible Support line cooks and kitchen team as needed Maintain clean and organized walk‑ins and storage areas Cleanliness & Equipment Care Clean and sanitize prep stations, tools, and equipment Follow cleaning schedules and assigned tasks Use knives and kitchen equipment safely and properly Report damaged equipment or safety concerns Operational Focus Accuracy and consistency in prep Food safety and seafood handling Cleanliness and organization Efficiency and readiness for service Performance Expectations Complete prep accurately and on time Maintain a clean and organized workstation Follow all food safety and sanitation standards Ensure proper seafood handling and storage Support kitchen efficiency and teamwork Qualifications Previous kitchen or prep experience preferred Experience handling seafood is a plus Ability to follow recipes and instructions Strong attention to detail and organization Language Requirements Spanish preferred Basic to intermediate English preferred Schedule & Availability Full‑time or part‑time based on business needs Must be available to work nights, weekends, and holidays Must be available for opening and prep shifts Ability to work 8–10+ hour shifts Compensation & Growth Pay based on experience Growth opportunities available within the company Physical Requirements Ability to stand for extended periods (8–10+ hours) Ability to lift up to 50 lbs Ability to bend, reach, and move quickly Fast‑paced kitchen environment Exposure to cold, wet, and slippery conditions Frequent handling of raw seafood Use of knives, sharp tools, and kitchen equipment Standards & Compliance Must follow all company policies and kitchen procedures Must comply with health and food safety regulations Maintain proper hygiene, sanitation, and safe work practices Additional Requirements Strong attendance and punctuality required Must be legally authorized to work in the U.S. Must be comfortable handling raw seafood Must work with urgency and attention to detail Must maintain a professional and team‑oriented attitude
LINE COOK – JOB DESCRIPTION
Position Summary The Line Cook is responsible for cooking and assembling menu items during service while maintaining speed, accuracy, and consistency. This role is critical to kitchen performance and requires strong execution, communication, and adherence to food safety and quality standards. This is a hands‑on, fast‑paced role .
