Sous Chef – Quince & Co.

Compensation: $90,000–$95,000 annually + comprehensive benefits

Quince & Co. is home to some of San Francisco's most celebrated restaurants, including Quince (Three Michelin Stars), Cotogna, and Verjus. Our philosophy is rooted in exceptional hospitality, craftsmanship, and a deep respect for seasonal ingredients and the people who produce them.

We are seeking an experienced, passionate Sous Chef to help lead our culinary team at Cotogna and uphold the standards of excellence that define our restaurants.

The Sous Chef is a hands-on culinary leader who works closely with the Executive Chef and Chef de Cuisine to oversee daily kitchen operations. This individual leads by example, mentors and develops the culinary team, and ensures every dish reflects our commitment to quality, consistency, and hospitality.

• Lead daily kitchen operations and maintain Michelin-level standards of execution.
• Supervise, coach, and mentor cooks while fostering a positive and accountable team culture.
• Ensure food quality, consistency, and presentation meet company standards.
• Oversee station setup, service execution, and closing procedures.
• Train and onboard new culinary team members.
• Maintain food safety, sanitation, and health department compliance.
• Assist with inventory management, ordering, receiving, and cost control.
• Help develop seasonal menus and collaborate on new dishes.
• Monitor labor efficiency while maintaining exceptional guest experiences.
• Communicate effectively with front-of-house leadership to ensure seamless service.
• Step into leadership responsibilities in the absence of the Executive Chef or Chef de Cuisine.

• 3+ years of culinary leadership experience in a fine dining or Michelin-recognized restaurant.
• Strong leadership, communication, and organizational skills.
• Passion for seasonal ingredients and refined cooking techniques.
• Ability to perform under pressure in a fast-paced, high-volume environment.
• Strong understanding of food safety and sanitation standards.
• Experience with ordering, inventory, and food cost management.
• Culinary degree is preferred but not required.
• Must be authorized to work in the United States or be eligible for employer-sponsored work authorization.
