Research & Development Chef

Eleven Madison Park is a fine dining restaurant overlooking Madison Square Park in New York City. Originally opened in 1998 as a French brasserie, the restaurant has been led by Chef Daniel Humm since 2006 and owned by his hospitality group since 2011. Under his leadership, Eleven Madison Park has continually evolved in both cuisine and guest experience, earning accolades including four stars from The New York Times and three Michelin stars.

Reports to: Chef de Cuisine and Director or Head of Research and Development

Job Purpose: The R&D Chef will work closely with the Chef de Cuisine, and Sous Chef teams at Eleven Madison Park to create and develop new dishes and menu ideas. The role will focus on researching, testing, and refining dishes while working closely with the culinary team to bring new concepts to life.

Duties and Responsibilities:

• Help o rganiz ing the food development for EMP, including organizing weekly tastings. Know what people are working on and write and log the weekly food update.
• Working with the purchaser at EMP, help source hard-to-find items for the restaurant; in the case that they don’t exist, finding the right vendor or artisan to make them
• Development new concept dishes for EMP and Clemente Bar .
• Pre- menu change, have photos for all the new recipes.
• Edit all recipes for menu changes.
• Work to ensure all recipe costing is completed one week prior to menu change.
• Work with the dining room to ensure menu descriptions are complete at least one week prior to menu changes
• Help run service once or twice a week.
• Help with restaurant operations during menu change , vacations and special events.

Qualifications:

• At least 6 years culinary experience, preferably Michelin
• Excellent organizational and communication skills
• Proficient with Microsoft Office
• Creative abilities
• Self-motivated and disciplined
