Head Chef, Mediterranean Cuisine 地中海菜系主厨

Job Requirements:

  1. physically fit with a valid food handler’s health certificate. Passionate about the F&B industry, aligned with the brand’s core values, and equipped with a strong sense of accountability and innovative mindset.
  2. Minimum 5 years of hands-on Mediterranean cuisine R&D experience. Candidates with prior experience as Head R&D Chef or Executive Chef at well-known F&B brands, high-end Western restaurants or specialized Mediterranean eateries are preferred; capable of independently completing full-range menu development.
  3. Master core flavor profiles and cooking techniques of Mediterranean cuisine. Well-versed in signature dishes from Mediterranean coastal countries including Greece, Italy and Spain. Able to uphold culinary authenticity while creatively adapting recipes to suit local Chinese dining preferences.
  4. Extensive proven track record in culinary R&D and dish iteration. Able to independently construct a complete dish system; possess in-depth knowledge of ingredient properties and cost control strategies to strike a balance between premium taste and cost-effectiveness.
Excellent team leadership, communication and coordination skills. Able to lead the R&D team to deliver results efficiently, cooperate seamlessly with cross-functional departments, and demonstrate robust problem-solving capabilities. Our company is fully launching a brand-new F&B brand focusing on the Mediterranean cuisine track. Centered on the core positioning of "Healthy, Authentic & Innovative", we aim to build a benchmark restaurant brand featuring distinctive flavors and strong market competitiveness. To support brand preparation and long-term growth, we are seeking a senior Head R&D Chef with profound Mediterranean cuisine expertise to join us. You will lead the establishment of a professional R&D team, define the brand’s signature flavors, and embark on a brand-new F&B journey together. Key Responsibilities:
  1. Take overall charge of full-category R&D for Mediterranean cuisine. Align with brand positioning to develop a complete menu system covering appetizers, mains, soups, desserts, beverages and more, balancing authentic flavors and market-driven innovation. Document standardized recipes, production workflows and quality specifications for all dishes.
  2. Lead continuous dish iteration and upgrade. Keep track of industry trends, innovative ingredients and shifting consumer demands within the Mediterranean cuisine segment. Launch new dishes on a regular basis, refine the taste, presentation and cost efficiency of existing offerings, and boost market competitiveness and customer satisfaction.
  3. Build and manage the culinary R&D team. Handle team recruitment, training, performance appraisal and daily administration; formulate R&D work plans, coordinate and oversee the delivery of all R&D projects to guarantee high R&D efficiency and consistent dish quality.
  4. Collaborate with the procurement department to source qualified suppliers of core Mediterranean ingredients, establish unified quality standards for raw materials, and optimize procurement solutions to control food costs without compromising authentic flavor profiles.
  5. Partner with operations and front-of-house teams to deliver professional culinary training (including cooking techniques, flavor profiles and food pairing logic). Resolve technical challenges encountered during in-store food production and ensure uniform dish output across all outlets.
  6. Participate in brand catering scene planning, menu layout design and pricing strategy formulation. Leverage professional R&D insights to provide culinary-related support for brand marketing and promotional campaign planning.
