ASSISTANT CORRECTIONAL FOOD MANAGER (DEPT OF CORRECTIONS)

Under the supervision of the Correctional Food Manager I (CFM I) and the general direction of the Correctional Business Manager I (CBM I), the Assistant Correctional Food Manager (ACFM) will assist the CFM I in planning, directing, and coordinating all related food service activities. The ACFM will prepare orders, prepare bids and prices for orders, plan menus, requisition supplies from the warehouse, take inventory, write policies and procedures, select and train staff, and review time sheets. In addition, the Assistant Correctional Food Manager will provide direct supervision for the feeding program. Minimum Requirements Minimum qualifications as stated in the Class Specification, including knowledge of food service operations, menu planning, inventory management, and staff supervision. Desirable Qualifications Knowledge of principles, procedures, and equipment used in the storage, care, preparation, cooking (including baking), dispensing, and serving food in large quantities. Knowledge of kitchen sanitation and safety measures, food handling sanitation, food values, nutritional and economical substitutions within food groups, food accounting, use of purchase orders for food and equipment, methods of cutting and preparing meat, and training methods.
