Position Summary
As one of the first interactions guests have with the restaurant, the Le Crocodile Server must strike a balanced tone of efficient, hospitable, and seamless service. Anticipating guest needs before they ask and guiding service with warmth and professionalism helps create a memorable dining experience. Reading the room is essential—some guests may be dining quickly before a meeting or event, while others may be settling in to relax, conduct business, or enjoy a leisurely meal. Striking the right tone with this varied guest list requires finesse and a strong understanding of pacing and hospitality standards. Le Crocodile Servers set the tone for an exceptional guest experience from arrival to departure. This is a wonderful opportunity for someone with a strong fine-dining background who thrives in a polished and service-focused environment. This role would have a mix of AM and PM shifts.

Job Responsibilities / Essential Functions

• Greeting all guests warmly upon arrival and departure.
• Setting up and maintaining the dining room and service stations to include table detailing, beverage stations, mise en place, and overall cleanliness.
• Close attention to the demeanor and needs of guests, recognizing when they may require water, assistance, managerial support, or additional accommodations.
• Communication with the kitchen and Chef team to ensure proper pacing, timing, and execution of service.
• Speaking with hotel guests via phone to take room-service orders following SOPs, including proper verbiage and quote times.
• Setting tables with clean linens, polished silverware, and spotless glassware.
• Running food while knowing and articulating proper drop lines for every dish. In-depth menu and allergy knowledge is expected.
• Maintaining strong floor knowledge, including table numbers and positions.
• Completing side work including but not limited to polishing silverware and glassware, cutting bread, portioning butter, maintaining beverage and sauce stations, sweeping, and spot detailing.
• Stocking server stations with all necessary supplies including printer paper, ink, sugar caddies, plates, glassware, and serviceware.

Position Skills & Requirements 

• Flexibility to work varying shifts, including mornings, evenings, weekends, and holidays.
• 2+ year as an NYC restaurant server or equivalent experience.
• Fine-dining experience highly regarded.
• Ability to study and memorize menu details including cooking techniques, allergens, and drop lines.
• Solid understanding of restaurant and hotel guest service standards, including VIP protocols.
• Ability to multi-task in a fast-paced environment.
• Ability to stand for 8+ hours.
• Ability to lift up to 10 lbs.
