At Olive & Finch, we believe in inclusive leadership, sustainable growth, and nourishing both our guests and our teams.Position SummaryThe General Manager (GM) in Training assists the senior restaurant leadership responsible for the overall performance and success of the restaurant. This exempt, non–tip-eligible role oversees all aspects of operations, including FOH and BOH leadership, financial performance, staffing, facilities management, and guest experience. The GM in Training directly assists the General Manager and Kitchen Manager, ensuring brand standards are upheld across service, quality, and hospitality. As the primary driver of business results, the GM in Training assists with inventory management, cost controls, staffing strategies, and maintaining an exceptional workplace culture. You will gain this expertise in these areas through direct, hands-on experience.Key ResponsibilitiesAssists all restaurant operations, including FOH, BOH, and leadership teams.Hire, train, and develop assistant managers and hourly staff, fostering a culture of hospitality and accountability.Ensure food, beverage, and service consistently meet Olive & Finch brand standards.Assists in inventory management processes and ensure accuracy in ordering and usage tracking.Monitor facilities and equipment, ensuring functionality, cleanliness, and safety.Uphold health, sanitation, and safety standards across FOH and BOH.Partner with restaurant and corporate leadership to execute company initiatives and provide feedback on opportunities.Serve as a role model for hospitality and guest service, handling escalated service recovery.Help General Manager drive continuous improvement in systems, training, and operational efficiency.Represent Olive & Finch values in the community and with vendors.Support restaurant leadership across multiple locations during the rotational period, prior to home store placement. Qualifications4–6 years of progressive restaurant management experience required, with at least 2 years in a GM role.Proven ability to oversee FOH and BOH operations in a high-volume environment.Strong financial acumen with experience managing budgets, P&L, inventory, and labor costs.Skilled in leadership, training, and performance management at both staff and management levels.Excellent knowledge of hospitality standards, food safety, and compliance requirements.Strong organizational, communication, and problem-solving skills.Flexible availability including mornings, evenings, weekends, and holidays.Competencies / Core ValuesStrategic and results-driven leader.Financially savvy and operationally disciplined.Inspires accountability and professionalism across teams.Upholds Olive & Finch brand standards with consistency and care.Reporting StructureReports to the Director of Operations. Directly assists Restaurant Leadership, along with all FOH and BOH staff through these roles.Work Environment & Physical RequirementsThis is a hands-on leadership role requiring extended periods of standing, walking, and active engagement with staff and guests in a high-volume restaurant environment. Must be able to bend, lift up to 50 lbs., and manage the demands of multi-shift operations.
