POSITION PURPOSE: To serve beverages and/or food to the guests in a friendly, courteous and timely manner, resulting in guest satisfaction. To prepare beverages for other servers to supply to guests and act as cashier for the lounge. ESSENTIAL FUNCTIONS: Greets guests in a courteous and friendly manner, promotes and documents orders for drinks. Mix, garnish and presents drinks using standard ingredient recipes and practicing prudent portion control by use of shot glass, jigger. Inputs the order into the micros POS to inform the kitchen of the particulars in the order being placed and to generate a check for each guest and maintain accountability for all food and beverage served Maintains proper and adequate set-up and cleaning of the bar on a daily basis. This includes but is not limited to requisitioning and stocking of all beer, wine, spirits, paper products, straws and stirrers, glassware, and flatware, condiments and produce based on projections from the daily functions sheet. Responsible of the keeping the glassware, flatware, & china clean and polished at all times. Presents the check to guest promptly. Receives payment (Cash, Credit Card, Room Charge, and Travelers Check) from guests, makes any change needed, records charges, and ensures vouchers are properly executed, balanced and closed all moneys at end of their shift. Responsible of keeping the designated amount in the personal bank at all times Responsible for maintaining stock, cutting, and storing of all fresh fruit and vegetable garnishes, juices and other perishables daily to insure product quality. Responsible for the cleanliness of the Bar and Equipment in the bar which includes but not limited to; Blenders, shavers, Taylor Machines, Sinks, Bar counters, floors, cabinets, display cases, Bar mats etc. Replenish beverages as requested. Check with guest to inquire about service and meal satisfaction. Market and serve upon request any appetizers, entrées, dessert items or specialty coffees Locks up and stores all beverages, food and other equipment items, deposits cash drops and secures bank at designated amount. SUPPORTIVE FUNCTIONS: In addition to performance of the essential functions, this position may be required to perform a combination of supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the hotel. OTHER: Due to the cyclical nature of the hospitality industry, employees may be required to work varying schedules to reflect the business needs of the hotel including holidays and weekends. SPECIFIC JOB KNOWLEDGE, SKILL AND ABILITY The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the job, with or without reasonable accommodation, using some other combination of skills and abilities. Must have basic knowledge of food and beverage preparation; & completion of food test Must have knowledge of various alcoholic beverages; & completion of beverage test Must have availability for Weekends, Holidays, Special days (Valentine’s Day etc.) Am and Pm. Basic mathematical skills necessary to operate a cash register, make change, total guest checks, count total bank, prepare cash drops, total all other charges and understand portion sizes. Sufficient manual dexterity in hands in order to use a knife to make garnish, pick up glassware and bottles, scoop ice, mix drinks, and reach overhead to retrieve stock. Must be able to lift at least 30 lbs. or move, pull/push a half keg of beer on a hand cart for a distance of 100 yards or on a slight incline. Able to read, speak and understand the English language in order to communicate with guests and take orders. Able to write in English clearly. Able to remember, recite and promote the variety of menu items. Able to take apart, clean, lube, and put together Fat Tuesday’s and dishwasher machines once trained. Able to operate a keyboard and point of sale procedures to pre-check an order and close out a check. May be required to work out doors in direct sunlight. Able to stand and work in confined spaces for long periods of time. Able to assist in food and garnish preparation. Able to negotiate stairs carrying containers such as ice buckets, liquor crates or boxes, and food trays in excess of 20 lbs. Able to reach a height of at least 5 feet for restocking and completing side duties. Required to move freely behind a bar in spaces of 2 feet or less. May be required to serve cocktails to guests at tables. Able to pull a banquet bar and negotiate corners or tight areas. Able to work under intense working conditions that will be hot, wet, loud and noisy. Ability to remain calm in emergency situations and to effectively work with the internal and external guests, some of whom require patience, tact and diplomacy to defuse anger and provide positive and proactive solutions. QUALIFICATION STANDARDS Education: High school diploma or equivalent. Bartending School accepted Experience: Prior Bartending experience in a high volume Bar/Restaurant/Hotel required. Licenses or certificates: Able to obtain Florida State Certified Profession Food Handler’s certification. Alcohol Awareness certification Able to obtain CPR and First Aid certifications.
