PM Kitchen Manager / Lead Expeditor

$25–$28/hour, depending on experience

Pasta Louise is looking for an experienced PM Kitchen Manager / Lead Expeditor to help lead dinner service at our busy neighborhood restaurant in Park Slope.

This position sits somewhere between an Expeditor and a Sous Chef . You’ll work closely with our Executive Chef and serve as the primary kitchen leader during PM service: organizing the line, controlling the pace of service, communicating with FOH, maintaining standards, and stepping onto a station whenever necessary.

Above all else, you must be an excellent expeditor.

We use printed tickets—not a KDS . You need to be completely comfortable managing a busy rail: reading and organizing tickets, firing and holding courses, coordinating multiple tables simultaneously, communicating clearly with every station, and making sure complete tables hit the pass together and on time.

Responsibilities include:

• Lead and organize the kitchen during PM service
• Expertly expedite from a printed ticket rail
• Call fires, holds and pickups clearly and confidently
• Coordinate pacing across pasta, hot apps and garde manger
• Maintain awareness of every table currently cooking
• Communicate delays, 86s and service issues quickly to FOH
• Maintain food quality, plating and consistency at the pass
• Jump onto any station on the line when necessary
• Prep and support production as needed before service
• Monitor station pars throughout the shift
• Complete end-of-day inventory and communicate product needs and pars to the Executive Chef
• Help keep the kitchen organized, clean and ready for the following service
• Provide calm, professional leadership to the line during busy services

You should have:

• Significant experience working in a busy, full-service restaurant kitchen
• Strong previous expediting experience
• Experience working with printed tickets
• The ability to confidently work multiple stations, including sauté/pasta, hot appetizers and salad/garde manger
• Excellent organization and communication skills
• The ability to remain calm and decisive when the board fills up
• Strong understanding of station prep, pars, food safety and kitchen organization
• A team-first attitude and willingness to jump in wherever needed
• Bilingual English/Spanish is a strong plus

Previous Sous Chef, Junior Sous Chef, Lead Line Cook or Kitchen Manager experience is helpful, but we're less concerned with your title than with your ability to run a line and control service .
