Part-time Dietitian

Overview

The Part-time Dietitian for Counseling and Prevention Services (CAPS) provides nutrition counseling to students seeking support for eating concerns, including eating disorders. As a member of a multidisciplinary team, the Dietitian collaborates with mental health clinicians, medical providers, and other campus and community partners to support student well-being through an integrated care approach. Referrals may originate from both CAPS clinicians and external providers. This is a part-time, non-benefited, hourly position that operates on a twelve-month fiscal year schedule and may work up to 20 hours per week.

This position is subject to annual renewal contingent upon funding availability and program needs.

Reporting Line: This position reports to the Executive Director of Counseling and Prevention Services.

Responsibilities

Nutrition counseling for eating concerns (80%)

• Provide individual nutrition counseling to students experiencing eating concerns, including eating disorders.
• Maintain accurate, timely, and confidential records of counseling services in the electronic health record used by CAPS.
• Monitor incoming service requests and manage caseload responsibilities to support timely student access to care.
• Assess client needs and make appropriate referrals to medical providers, therapists, or higher levels of care when indicated.

Indirect clinical care and coordination (10%)

• Coordinate referrals and collaborate with clinicians and healthcare providers as part of an integrated and multidisciplinary care model.
• Provide consultation to CAPS clinicians for eating disorders and nutrition-related concerns.

Other professional responsibilities (10%)

• Participate in administrative and departmental activities as needed (e.g., weekly staff meeting).
• May provide occasional outreach presentations or educational programming as needed.
• May serve as preceptor or mentor for USU Nutrition students.

Qualifications

Minimum Qualifications:

• Equivalent to graduation from a four-year college or university with a major in Nutrition Science or related field.
• Minimum of two years' experience managing and developing nutrition and diet-based programs during which time the applicant has acquired and demonstrated the ability to perform essential duties of position.
• Registered Dietitian with the Academy of Nutrition and Dietetics.
• Current License to practice as a Certified Dietitian in the State of Utah (or ability to obtain within 6 months of employment.

Preferred Qualifications:

• Demonstrated experience and/or expertise providing nutrition counseling for individuals with eating disorders.

Knowledge, Skills, and Abilities:

• Effective time management skills and ability to work independently and collaboratively within a team.
• Proficiency with basic computer applications and clinical documentation systems.
• Strong oral, written and interpersonal communication skills.
• Knowledge of evidence-based nutrition interventions for eating disorders and related concerns.
• Commitment to ethical practice, professional standards, and student-centered care.

Work is performed in a combination of indoor and outdoor settings. Indoor work typically occurs in office spaces, event spaces, classrooms, or public/community locations, which are generally protected from weather conditions but may involve temperature variations. While indoors, incumbents may sit for extended periods and perform repetitive hand movements (e.g., typing, data entry).
This position also includes outreach and programming conducted outdoors and in community-based locations. Outdoor work may involve exposure to changing weather conditions, including extreme heat, cold, wind, or sun, and may require walking on uneven terrain, standing for extended periods, and transporting materials or supplies.

Counseling and Prevention Services (CAPS) is part of USU's Division of Student Success. CAPS has been accredited by the International Accreditation of Counseling Services (IACS) since 1996. We are multidisciplinary team, composed of professionals from psychology, social work, counseling, alcohol and drug prevention, and nutrition. We have robust training programs, including a doctoral internship accredited by the American Psychological Association and practicum in clinical/counseling psychology. CAPS offers a range of services, including individual and group therapy, single-session therapy, assessment, crisis appointments, case management, suicide prevention programming, alcohol and drug prevention education, outreach, and consultations.
