Meat Inspector

Perform inspections at meat and poultry plants in Oklahoma to ensure compliance with applicable federal and state laws, rules and regulations Quickly identify abnormalities in food animals prior to and after slaughter Recognize and identify actual and potential food safety hazards in the meat-processing environment Perform agriculture inspections at meat processing establishments Complete and submit reports and documents Collect, package and ship samples Inspect, sample and investigate facilities or individuals regulated by the Food Safety Division Operate and maintain monitoring and detection equipment Travel to multiple locations within Oklahoma on a daily basis, including some overnight travel for out-of-state meetings Requirements Bachelor's degree in an agricultural, biological, plant, animal, physical or natural science, food technology, or a closely related field; or an equivalent combination of education and experience; or completion of a two-year meat science program Knowledge of procedures for inspecting, evaluating and grading various agricultural commodities Knowledge of state and USDA regulations governing standards and transport of applicable agricultural products Knowledge of federal and state laws regarding packaging, labeling and other agricultural-product standards Knowledge of environmental and sanitation standards Knowledge of materials and equipment used in the applicable agricultural industry Knowledge of various types of animal and plant diseases Knowledge of record keeping and basic mathematics including percentages Knowledge of English usage Ability to conduct inspections to determine compliance with established standards, laws and regulations Ability to follow complex oral and written instructions Ability to communicate effectively, orally and in writing Ability to establish and maintain effective working relationships Ability to attend to several matters simultaneously Ability to operate and maintain monitoring and detection equipment Ability to apply research methodologies Valid driver's license required for job-related travel Willingness/ability to work in extremely hot or cold environments and around sharp tools and equipment Professional conduct representing the State of Oklahoma Subject to a twelve-month probationary period Core Competencies Demonstrates expertise in conducting inspections and evaluations of meat and poultry facilities to ensure compliance with federal and state regulations.
