Sushi cooks play a vital role in delivering high-quality MediterrAsian cuisine by preparing sushi dishes with consistency, creativity, and adherence to the highest food safety and presentation standards.ResponsibilitiesPrepare all types of sushi, including maki, nigiri, and sashimi, with precision and consistencyPrepare sushi rice to proper seasoning, texture, and presentation standardsChop, slice, and fillet fish while maintaining the highest quality standardsCustomize orders to accommodate guest preferences and food allergiesFollow prep lists and instructions from chefs and supervisorsWork with speed, accuracy, and attention to detail in a high-volume environment, staying organized and composed under pressureMaintain proper use, care, and cleanliness of kitchen equipment and toolsComply with all department policies, company standards, and state sanitation and health regulationsWork collaboratively as part of a team and maintain reliable attendance and punctualityMaintain confidentiality of company information, recipes, and preparation techniquesThis is not an exhaustive list of job responsibilities.Requirements and QualificationsMinimum 2 years of experience as a sushi cook or in an Asian restaurant within a high-volume environmentStrong knowledge of sushi types, knife skills, and sushi-rolling techniquesAbility to follow recipes, perform basic arithmetic, and communicate clearly and effectivelyUnderstanding of safety, sanitation, and proper food handling proceduresFood Handler's Permit requiredFlexible availability, including nights, weekends, and holidaysMust be able to speak, read, and understand basic cooking directionsPhysical Demands and Work EnvironmentAbility to stand and walk for extended periods throughout the shift.Ability to lift, carry, push, or pull up to 50 pounds as needed.Frequent bending, reaching, twisting, and repetitive movements.Ability to work in a fast-paced environment with varying noise levels and temperatures.Ability to safely navigate busy operational areas and work around equipment, wet surfaces, and other workplace conditions.Sign-on bonus of $250 is payable after the completion of six (6) months of continuous employment. To be eligible, the employee must be actively employed and in good standing at the time of payout, with no written disciplinary action on file.
