Inspired by the alebrijes of Oaxaca—vivid, hand-carved creatures that blend imagination and tradition—Taco Pegaso brings Mexico’s vibrant street flavors to life through bold combinations, honest ingredients, and chef-driven techniques.

Rooted in the flavors of Oaxaca and infused with Austin’s creative energy, our menu transforms everyday tacos into expressive works of culinary art. With house-made tortillas, slow-cooked fillings, and salsas that balance smoke, heat, and freshness, Taco Pegaso delivers a fast, soulful dining experience that celebrates Mexico’s artistry and flavor in the heart of the city.

We are seeking an experienced and dependable Line Cook to join our culinary team. This position is ideal for someone who thrives in a lively, high-volume food hall where quality, speed, teamwork, and hospitality are essential.

Responsibilities:

• Prepare and cook menu items according to established recipes, presentation standards, and food-safety guidelines.
• Work efficiently in a high-volume, fast-paced food hall environment.
• Complete daily prep and maintain proper product levels throughout the shift.
• Label, date, store, and rotate food properly using FIFO procedures.
• Maintain consistency in food quality, portioning, presentation, and ticket times.
• Keep assigned stations clean, organized, stocked, and ready for service.
• Support multiple stations or concepts as needed based on business volume.
• Communicate clearly and respectfully with culinary team members, front-of-house employees, and managers.
• Follow all opening, closing, cleaning, and sanitation procedures.
• Notify management of equipment, supply, quality, or safety concerns.
• Follow all Fareground Food Hall, Taco Pegaso, an procedures.
• Contribute to a positive, collaborative environment focused on excellent food and guest satisfaction.
• Arrive on time and ready to work at the scheduled start of each shift.

Qualifications:

• Previous line cook or high-volume kitchen experience preferred.
• Knowledge of food preparation, cooking techniques, and proper food-handling practices.
• Ability to work quickly and accurately while maintaining quality standards.
• Flexibility to work evenings, weekends, and holidays as needed.
• Ability to stand for extended periods and safely lift up to [insert weight] pounds .
• Food Handler certification or willingness to obtain one, as required.

Qualifications:

• High school diploma or GED.
• Minimum 2 years of previous kitchen experience in a similar position.
• Knowledge of kitchen equipment and safety rules.
• Spanish-speaking skills would be a definite plus.
• Must be able to work well under pressure.
• Strong written and verbal communication skills.
• Able to self-motivate in a work environment.
• Able to follow written or verbal instructions.
• Able to work in a high-paced and hot environment.
• Able to multitask and work all shifts, including holidays.
• Able to do repetitive work.
