Woon is a homestyle Chinese restaurant located in Historic Filipinotown. We are a high volume restaurant with a small team that wears a lot of hats and works together to get things done. We are seeking a Back of House Lead who enjoys working in a fast-paced environment. We are seeking someone to work closely with our CDC and other Leads in managing a tight knit team, production schedules, service efficiencies, new specials training new staff, and communication. The schedule would be a mix of overseeing prep shifts and expo shifts to oversee service.
Full-Time, 5 days / weekJob Responsibilities as Lead Line Cook include but are not limited to:
- Responsible for all kitchen operations and maintaining kitchen standards i.e. kitchen cleanliness, mise en place, walk in organization
Cleanliness / Ordering
- Maintaining cleaning list and deep cleaning list for dishwashers and BOH
- Enforcing the cleaning protocols - checking off all items
- Ordering / sending final orders
Preparation
- Checking proper preparation of food daily during shifts - correct cuts, taste, PARS, etc.
- Ensuring all stations are ready for service
- Determine production schedules and staff requirements necessary to ensure timely delivery of services.
- Assist CDC or Sous plan, direct, or supervise the food preparation or cooking activities
Service
- Overseeing and/or training staff during service
- Maintaining quality of food and plating
- Expediting when needed
- Ensuring items are not 86’ed unless they must be
- Writing final counts for items on scallion pancake and fry/bao
- Working with CDC or Sous on specials
Closing
- Responsible for closing the kitchen nightly in a timely manner - this includes helping the dishwasher and putting away all kitchen dishes, utensils and smallwares
- Making sure the walk-in and freezer is neatly organized
- Ensuring all kitchen equipment is up to standards in terms of cleanliness and organization
- Ensuring all smallwares are returned to their original locations - on their hooks, at their stations, etc. - do not leave this for the opening crew
- Helping FOH with dishes if all BOH is complete
- Responsible for locking up/ arming if needed
- Lead Line Cook experience is required
- Strong leadership and communication skills is a must
- Food Handler's Card required
- Ability to lift up to 25 pounds
