Lead Line Cook

The Line Lead Cook – BBQ Station is responsible for leading the grill station during service while ensuring every dish meets Perse's standards of quality, consistency, and presentation. This position oversees daily mise en place, manages ticket flow, maintains proper cooking temperatures, and ensures all proteins are prepared with precision and consistency. The Lead Cook is expected to maintain the highest standards of personal hygiene, food safety, sanitation, and station cleanliness at all times, ensuring full compliance with California Health Department regulations and Perse's operating standards. Responsibilities also include training and mentoring junior cooks, maintaining inventory, minimizing waste, communicating effectively with the Executive Chef and kitchen team, and keeping the BBQ station organized, clean, and service-ready before, during and after every shift to deliver an exceptional fine dining experience.
