Lead Steward

THE OPPORTUNITY

Quello is a forthcoming fine dining destination in Greenwich, Connecticut — a restaurant built around disciplined hospitality, a confident culinary point of view, and the belief that a great meal is the sum of a thousand small decisions made well.

We are looking for a Lead Steward & Facilities Coordinator to run the backbone of the back of house. This is the person who leads stewarding through prep and service, owns the cleanliness and organization of the kitchen, and keeps the building itself in shape: tracking repairs, handling basic upkeep, and coordinating outside vendors when larger work is needed. The role reports to the Executive Chef and works closely with the General Manager on facilities and asset care.

The right candidate takes real pride in a spotless, well-maintained operation, leads by example, communicates clearly in both English and Spanish, and is handy enough to keep small issues from turning into large repair projects.

WHAT YOU'LL OWN

Stewarding & Kitchen Cleanliness

• Lead the steward team through prep and service: daily cleaning and upkeep of the kitchen, dish room, and all back-of-house areas.
• Run the dish room during service: keep china, glassware, silver, and cookware clean, organized, and moving at the pace the kitchen and floor demand.
• Maintain daily cleanliness standards alongside the outsourced cleaning company, which handles its own scheduled scope.
• Hold the kitchen to health department standards every day, not just inspection day.

Team Leadership

• Schedule, train, and lead the steward team. Set the pace, set the standard, and hold it shift after shift.
• Coach in the moment, in English and Spanish, so every team member knows exactly what is expected.
• Build a culture of pride and accountability in the dish room and back of house.
• Support hiring and onboarding for the steward team alongside the Executive Chef.

OS&E, Ordering & Receiving

• Own OS&E par levels, breakage logs, and replacement needs for china, glassware, silver, and smallwares.
• Order cleaning supplies and chemicals, and keep par levels where they need to be.
• Support receiving: check deliveries against invoices and flag anything short, damaged, or wrong.
• Keep storage areas organized, labeled, and rotated.

Facilities & Asset Care

• Maintain a running facilities and repair log, reviewed weekly with the General Manager.
• Handle basic non-licensed upkeep such as touch-up paint, HVAC filter changes, and furniture adjustments.
• Catch small issues early and keep them from turning into large repair and maintenance projects.
• Coordinate and follow up with qualified outside vendors for plumbing, electrical, HVAC, and larger repairs. This role does not perform licensed trade work.

Pre-Opening Support

• Be hands-on with receiving, organizing, and placing OS&E ahead of opening.
• Help set up the dining room and assemble furniture as the space comes together.

Administration & HR Support

• Keep clean records in Word and Excel: cleaning checklists, schedules, inventory and breakage logs, order sheets, and the repair log.
• Handle day-to-day paperwork for the steward team, including timekeeping and scheduling support.
• Support HR administration such as onboarding documents and incident reports, in partnership with management.

WHAT WE'RE LOOKING FOR

• Bilingual in English and Spanish. This is a core requirement of the role.
• 3+ years of stewarding, porter, or back-of-house experience, with at least 1 year leading a team. Fine dining or high-volume experience preferred.
• General maintenance aptitude. Comfortable with tools, basic repairs, and figuring out what a fix needs, and honest about when it needs a licensed pro.
• Working knowledge of sanitation and food safety standards. ServSafe or equivalent certification is a plus.
• Comfortable with Microsoft Word and Excel, and able to handle schedules, logs, and basic paperwork without hand-holding.
• Experience ordering and receiving. You can check an invoice, catch a mistake, and hold a vendor to it.
• Organized, reliable, and physically capable: comfortable on your feet for full shifts and able to lift up to 50 pounds.
• Calm under pressure. When the kitchen is slammed, the dish room holds the line.
• Pre-opening or opening-team experience is a plus.
