We are seeking an experienced Dishwasher with an innate sense of hospitality and genuine curiosity about the people, places, and traditions behind every bottle. Lucania's wine program will be rooted in Southern Italy while celebrating the extraordinary diversity of Italian wine.

We're looking for someone who can make wine exciting and approachable, whether introducing a guest to an indigenous grape they've never heard of or helping a longtime collector discover a new producer.

THE ROLE

As a Dishwasher / Porter at Lucania, you'll help keep the kitchen clean, organized, safe, and moving efficiently throughout the day.

You'll be responsible for maintaining the dish area, cleaning and sanitizing kitchen equipment and workspaces, supporting proper waste removal, and ensuring cooks and service team members have the clean tools and equipment they need.

This is a physically active, fast-paced position. We're looking for someone dependable, organized, and willing to jump in wherever support is needed.

WHAT YOU WILL DO

• Wash, sanitize, and properly store dishes, glassware, utensils, pots, pans, and kitchen equipment.
• Operate the dishwashing machine safely and efficiently.
• Maintain a clean, organized, and sanitary dish station throughout the shift.
• Ensure clean plates, cookware, utensils, and equipment are returned promptly to the appropriate areas.
• Monitor dish and cookware needs during service and prioritize accordingly.
• Keep kitchen floors, walls, sinks, drains, mats, and work areas clean and safe.
• Complete scheduled cleaning projects throughout the kitchen and storage areas.
• Remove trash, recycling, compost, and cardboard according to restaurant and building procedures.
• Maintain trash and waste areas in a clean and sanitary condition.
• Assist with receiving deliveries and organizing products and supplies when needed.
• Help maintain organized storage, dry storage, and back-of-house areas.
• Properly use and store cleaning products according to safety and sanitation procedures.
• Communicate equipment, sanitation, or safety concerns to kitchen leadership.
• Assist the culinary team with basic kitchen support and prep tasks when requested and appropriately trained.
• Complete opening and closing responsibilities according to kitchen standards.
• Support fellow team members during busy periods and contribute to a respectful, collaborative workplace.

REQUIRED QUALIFICATIONS

• Previous restaurant, dishwasher, or kitchen experience preferred but not required.
• Reliable, punctual, and consistent attendance.
• Ability to work efficiently in a fast-paced environment.
• Strong attention to cleanliness, organization, and workplace safety.
• Ability to follow instructions and established cleaning and sanitation procedures.
• Ability to safely operate commercial dishwashing and cleaning equipment after training.
• Positive attitude and willingness to support the team.
• Ability to communicate effectively with kitchen and restaurant team members.
• Willingness to learn and take on additional responsibilities as appropriate.
• Current California Food Handler Card or ability to obtain prior to start.

THE DETAILS

• Full-time and part-time positions available.
• Hourly, non-exempt position.
• San Francisco, CA · In-person.
• Availability for mornings, evenings, weekends, holidays, and special events may be required based on scheduling needs.
• This position requires standing and walking for extended periods, frequent bending, reaching, lifting, pushing, and pulling, and the ability to lift up to 50 pounds.
• Work is performed in a fast-paced commercial kitchen with exposure to heat, sharp equipment, and varying temperatures.
