Moncayo Golf & Ocean Club is seeking a Full-Time, Year-Round Line Cook to join the Culinary Department. Reports To: Chef de Partie

Work Location: Moncayo Golf & Ocean Club, Puerto Rico.

Job Summary:

The Line Cook prepares and executes high-quality dishes in accordance with Moncayo's established recipes, presentation standards, and service expectations. Reporting to the Chef de Partie, this position is accountable for daily mise en place, station readiness, portion consistency, safe food handling, and effective communication during service. The Line Cook supports culinary operations across outlets and events while contributing to a respectful, collaborative, and member-focused team environment.

Primary Tasks:

Execute daily mise en place according to established recipes, production requirements, and service standards, ensuring readiness for each meal period.

Prepare and plate menu items according to standardized recipes, approved cooking methods, portion specifications, presentation standards, and service timing.

Maintain clean, stocked, safe, and organized workstations before, during, and after service.

Label, date, store, and rotate all food products correctly, following FIFO procedures, temperature controls, and applicable food safety requirements.

Follow sanitation, cross-contamination prevention, and allergen-handling procedures; immediately report food safety concerns.

Monitor product quality and station par levels; communicate shortages, waste, or equipment concerns promptly to the Chef de Partie.

Communicate effectively during service regarding ticket timing, item availability, modifications, and operational challenges.

Support culinary operations across multiple dining outlets, events, and production areas as required by business needs.

Work collaboratively with culinary and stewarding colleagues, following guidance from supervisors and supporting consistent execution.

Participate in training, coaching, and cross-training opportunities to strengthen technical skills and support professional growth.

Requirements and Skills:

Arrive on time, prepared for the shift, and maintain a professional appearance and personal hygiene.

Ability to stand and move throughout shifts; safely lift, carry, bend, and reach as required for essential kitchen tasks, with reasonable accommodation where applicable.

Demonstrate reliability, ownership, accountability, initiative, and a solution-oriented approach.

Communicate clearly and respectfully with colleagues and supervisors.

Remain flexible, organized, and adaptable as service demands and outlet assignments change.

Qualifications:

At least 1 year of relevant professional kitchen experience; luxury resort or fine-dining experience preferred.

Strong focus on culinary excellence and attention to detail.

Working knowledge of applicable Puerto Rico food safety requirements, safe food handling, sanitation, and allergen awareness; required certifications must be obtained or maintained as directed by company policy.

Ability to work efficiently under pressure and follow instructions.

Working Conditions:

Work schedules may vary with service, special events, and business needs; overtime is handled in accordance with applicable law and company policy.

High-paced kitchen environment requiring stamina and focus.

Availability to work scheduled shifts, including weekends and holidays, based on operational needs.
