We are seeking a dedicated Commissary Prep Cook to join our Central Commissary team in Irvine. This role is responsible for preparing, batching, and cooking products according to company recipes and food safety standards while supporting daily production goals. Responsibilities Production & Food Preparation Assist the Production Manager in executing daily production schedules. Weigh, mix, and batch products according to approved recipes. Operate steam kettles safely and efficiently. Follow all recipe instructions without deviation. Complete temperature checks, traceability logs, and production documentation. Verify weights, measurements, and procedural steps during batching. Food Safety & Quality Assurance Follow Good Manufacturing Practices (GMPs). Execute HACCP procedures under Quality Assurance guidance. Support allergen control programs and report any deviations. Maintain sanitary conditions following SOPs and SSOPs. Ensure scales, meters, and thermometers are calibrated and sanitized before use. Equipment & Facility Support Implement lock-out/tag-out procedures when required. Report equipment issues promptly and coordinate with Maintenance. Assist with product changeovers. Utilize proper personal protective equipment when handling hot equipment and steam lines. Support FIFO (First In, First Out) inventory practices. Requirements Must Have 1+ year of food manufacturing, food processing, or related production experience. Ability to follow recipes and production procedures accurately. Basic understanding of food manufacturing and processing operations. Strong attention to detail and commitment to quality. Ability to work independently and within a team environment. Ability to lift up to 30 lbs frequently and 40 lbs occasionally. Ability to stand, walk, reach, bend, and perform physical work throughout the shift. Excellent attendance and reliability. Ability to work in a fast-paced production environment. Nice to Have High school diploma. Bilingual English/Spanish communication skills. Previous experience operating industrial food production equipment.
