The Dietitian I performs routine nutrition services for primarily ambulatory residents at state supported living centers, assessing nutritional status, planning therapeutic menus, using laboratory and anthropometric data to monitor status, and providing training to individuals, staff, and families. The role supports quality assurance of menu and nutrition service activities, prepares reports, and offers technical assistance. It complies with departmental and ICF/IID regulations and operates under moderate supervision of a Nutritionist III. Essential Job Functions Work regular hours, maintaining a specific shift schedule; may require rotating schedule, extended shift, or overtime. Provide medical nutrition therapy for ambulatory consumers, evaluating and developing nutritional care plans based on evidence-based knowledge and professional experience. Prepare updates for quarterly, annual, and other reports; enter updates in progress notes. Act as a member of the Inter-Disciplinary Team to develop individual care plans and support consumer goals. Counsel and train consumers, staff, and families on nutritional principles and modified diet plans. Develop individualized therapeutic menus for common disease states; calculate and evaluate specialized enteral feedings. Consult with the food service department to provide accurate and timely information on menu changes, special diets, and food textures. Participate in Quality Assurance Audits related to clinical nutrition services, meal service, or other disciplines; conduct in-service training for staff on nutrition principles and therapeutic diets. Maintain discipline registration and/or license as required. Complete required training as directed by agency policy. Participate in disaster response and continuity of operations as assigned, which may require alternate shift patterns or location. Knowledge, Skills, and Abilities Skill in providing nutrition care. Knowledge of food and nutrition, food systems management, and food science; documented by graduation from an accredited four‑year university or college and completion of a dietetic internship. Knowledge of normal and therapeutic nutrition and of nutrition needs related to developmental disabilities and mental health conditions. Knowledge of food service standards and procedures, and food science principles. Ability to counsel and train others in food and nutrition. Ability to evaluate and communicate nutritional needs. Ability to develop and evaluate nutrition service plans. Ability to interact effectively with consumers, families, and staff. Ability to work with various teams. Ability to interpret regulations, policies, and procedures. Skill in professional oral and written communication. Ability to perform basic and complex math calculations. Functional skills and knowledge of computer word processing, spreadsheets, e‑mail, and electronic file storage. Registrations, Licensure Requirements or Certifications Current registration as a Dietitian (R.D. or R.D.N.) with the American Academy of Nutrition and Dietetics Commission on Dietetic Registration and/or current licensure as a Dietitian (L.D.) with the Texas State Board of Examiners of Dietitians. If registration or licensure is provisional, it must be achieved within 1 year of employment. Initial Screening Criteria Graduation from a dietetics program accredited by the Accreditation Council for Education in Nutrition and Dietetics (ACEND).
