Position summary: Prepares hot and cold food using a variety of production tools, techniques, and equipment. Ensures food is fresh, high quality and prepared under sanitary conditions with safe food handling practices. Manage food orders, menus, sanitation, inventory, restaurant financials. Ensures all food is prepared restaurant style and cooked to order.

Specific duties and responsibilities: oversees all food production and employees in their assigned restaurant; acts as the executive chef in his or her absence; guides and assists the staff in food preparation, proper cooking techniques and use of food products; reviews production with staff daily; holds or directs pre service meetings with front of house team members; ensures correct quantities of foods are made and correct portions served; reviews food portions with service staff as needed to avoid shortages; manages all ordering and receiving of foods for their designated restaurant; inspects deliveries to ensure wholesome foods are received in the correct quantities; controls food cost while keeping in line with the standard of high quality and perceived value; this position requires the chef to visit the dining areas regularly; assures that prepared foods are distributed on time to designated area for scheduled meal service; tastes food prior to service and adjusts seasoning as needed, mindful of therapeutic diets; checks and monitors food temperatures through the production process to ensure food safety; prepare a meal which is palatable and appetizing in appearance; ensures the work area is orderly and sanitation practices are enforced at all times; follows safety precautions when using kitchen equipment; demonstrates responsibility for department security; demonstrates reliability and conscientiousness in completing duties; serves as role model by example; checks all refrigerators, making sure all foods are covered and that the interior is neat and clean, and temperature of all foods are recorded; ensures that written menus and recipes are followed; assures that prepared foods are distributed on time to designated area for scheduled meal service; ability to understand and be able to prepare therapeutic diets; ensures proper storage and handling of food and avoiding food waste; responsible for care of food service equipment; ability to work cooperatively with food service staff and other departments; attends in-service training programs for food service employees; follows infection control procedures related to dining services department; assures work areas are cleaned before/after and during daily production; ensures staff follow and observe all policies and procedures for food safety, sanitation, and work safety; coaches cooks for appropriate practices as needed; comes to work as on time scheduled and consistently demonstrates dependability and punctuality; accepts assigned duties in a cooperative manner; accountability for data contained in the employees' handbook; sets up workstation/steam table according to daily production sheets; always adheres to resident's rights policies; presents a clean, neat appearance always; performs other related duties as requested by executive chef/director; adheres to the code of conduct statement and element of the compliance program; attends meetings and completes Relias in-services as required.

Position requirements: education: minimum: associate's degree in culinary arts; preferred: degree in culinary arts; experience: minimum: 3-5 years of food service experience, including at least 1 year in a supervisory or managerial role; preferred: 5+ years of food service and management skills.
