Position Overview

The Dough Chef is responsible for verifying batches are correct from prebatch, precisely cooking dough according to recipe, depositing and flattening to make sure crackers are in specification, and the baking of the dough through the ovens. The dough chef will ensure he is delivering a quality product out of the oven to the packaging lead.  The dough chef must ensure that the dough and cracker quality is up to the company standard. Follow all company GMP standards and be a leader for food safety on the floor.  Must be able to perform all tasks with safety and quality in mind. Machinery must be cleaned from all residues and sanitized entirely. Ability to learn, retain and implement technical knowledge on kettles, depositor, flattener and ovens.  Maintain a strong team with continuous training of new and seasoned technicians.

General responsibilities

·         Report promptly to the shift supervisor when any issues arise.

·         Make depositor adjustments to ensure dough is at correct weight.

·         Make flattener adjustments to ensure crackers have the proper diameter and thickness.

·         Adjust oven temperatures to ensure the highest quality cracker.

·         Ensure scrapers on flattener belt are adjusted correctly.

·         Ensure flattener belt guide rails are installed correctly.

·         Call the shift maintenance team if you cannot resolve any machine related issue.

·         Call the shift QA technician if you have quality related issue.

·         Call the Packaging Lead when start/end of the batch and if you find any issues with the crackers.

·         Follow and sign off Dough Chef Check List during the cooking process.

·         Ensures batch times are meeting the time deadlines as posted in the Production batch schedule.

·         Performs minor operator maintenance, autonomous maintenance and trouble shoots machines when required to keep cracker quality and production efficiency.

*Schedule: Monday through Friday, 10pm - 6:30am*
