Anchor/Lead Expiditor

The Anchor is the person who owns the pass.

We're looking for a high-performing, high-standard restaurant professional who can handle high-volume pressure without ever compromising quality. We are looking to fill this position at all locations!

You know the menu. You know the build books. You know what Great White standards look like, and you're not afraid to protect them.

You'll be responsible for maintaining the quality, accuracy, timing, and flow of food leaving the kitchen while keeping communication clear between the kitchen, service team, and management.

• Full command of the Great White menu, build books, and standards.
• Confidence to send a dish back when it doesn't meet our standards.
• Clear, direct communication with servers, runners, chefs, and managers.
• Ability to set and communicate realistic expectations around ticket times and guest needs.
• Ability to manage a full KDS without getting overwhelmed.
• Strong attention to detail and follow-through.
• Ability to identify and solve problems before they reach the guest.
• Calm, focused presence during high-pressure service.
• Ability to command respect without ego.
• Strong understanding of food quality, execution, and hospitality.
• Previous experience in a high-volume restaurant environment.

• Own the pass during service and maintain control of the flow of food.
• Check every dish for quality, presentation, accuracy, modifications, and proper execution before it reaches the guest.
• Manage ticket flow and prioritize the KDS during high-volume service.
• Communicate clearly between the kitchen and dining room.
• Keep servers and managers informed of ticket times, delays, modifications, and unavailable items.
• Catch problems before they reach the guest and communicate solutions quickly.
• Maintain an organized, clean, and efficient pass.
• Support both FOH and BOH teams to keep service running smoothly.
• Hold yourself and the team accountable to Great White standards.
• Lead by example and maintain a positive, respectful, and professional working environment.

This position requires the ability to work in a fast-paced restaurant environment for extended periods of time. The role regularly requires standing and walking for prolonged periods, moving throughout the kitchen and dining room, reaching, bending, lifting and carrying items such as food, trays, and restaurant supplies, and safely performing the essential functions of the position.
