Refrigeration/Kitchen Technician

The Refrigeration/Kitchen Technician is responsible for all installation, maintenance, inspection and/or repair of commercial-grade food preparation and holding appliances and equipment in all facilities owned or operated by Universal Studios Hollywood, along with other duties as assigned. This includes but is not limited to operational aspects such as preventive maintenance tasks, repairs and performing and/or overseeing new and replacement installations. Such diagnostics and repair of industrial kitchen and bakery equipment includes mixers, direct steam kettles, proofers, sheeters, dough rounder, rack ovens. Gas and electric kitchen equipment includes fryers, steamers and ovens such as pressure cookers, steam kettles, tilt skillets, commercial dish machines, combi-ovens, microwaves, stoves and conveyor type ovens, broilers, hot-hold units, steam tables, convection ovens, woks. Responsibilities Must be able to climb, bend, kneel and work with hands or arms above shoulder level for extended periods of time. Occasional ladder or roof access may be necessary. Exposure to noise, heat, cold, slippery, wet dirty conditions and extensive walking. Working knowledge of gas, steam, or electrical systems installed on commercial kitchen equipment. Installation of new equipment and supporting work. Installs electrical components and controls to circuits and tests for proper operation. Inspects all cooking equipment, controls and devices within said equipment. Basic knowledge of LOTO (Lock Out/Tag Out). Equipment cleaning, care and maintenance. Adheres to all Standard Operating Procedures within Technical Services and USH at large; promotes and provides extraordinary guest service for both internal and external guests; answers questions, offers information, and provides assistance in a courteous manner. Understands and demonstrates proper use of safety practices and ensures department standards are maintained and safety policies for the Park are upheld. Performs other duties as assigned. Qualifications / Requirements Applicant must be 18 years of age or older, with a minimum of 5‑7 years of field experience in the trade systems. Ability to understand and commission new commercial kitchen equipment. CFESA certified is not required, but a plus. Will be required to join Local 40 union and pay respective dues. Knowledge of local health department codes; must be able to understand and operate under Hazard Analysis Critical Control Point (HACCP) guidelines and other food safety/sanitary guidelines. Knowledge of applicable code requirements, methods and practices followed in the maintenance and safe operation of tools, machinery, and equipment. Ability and willingness to work a variety of schedules, overtime, weekends and holidays with short notice. Ability and willingness to respond to incidents in locations requiring climbing, fall‑protection, and other non‑traditional work environments. Must possess excellent interpersonal communication skills both verbal and written on a technical level. Must have the ability to motivate employees and work independently and as part of a team. Desired Characteristics 5‑10 year experience of commercial kitchen equipment repair. AA degree or certificate of completion of Trade school. Excellent organizational, verbal and written communication skills. Demonstrated ability to work with all levels of employees and management, and willingness to give assistance to team members to complete tasks at hand from a department level. Demonstrated ability to work independently under pressure; proactive thinker/self‑starter. Excellent organizational, verbal and written communication skills. Ability to read and interpret documents such as mechanical prints, safety rules, operation and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence, knowledge of MAXIMO CMMS or equivalent software a plus. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form. Proficiency in Microsoft Word, Excel and Outlook; knowledge of inventory software, i.e. Maximo. Ability to contribute to system improvement process. Working Conditions Some jobs require an employee to be exposed to inclement weather conditions. Some jobs require an employee to be exposed to hazardous work environments. Exposure to extreme temperatures relative to the various systems. Exposure to weather, noise, and hazardous materials. Required to work in confined spaces. Required to work at heights. Required to work inside extreme heat conditions at times. Physical Requirements The job duties require an employee to move heavy objects. The job duties require an employee to traverse rough terrain. Must be able to lift, carry, push, and pull heavy materials and objects up to 50 lbs. Must be able to stand, walk, bend, stoop, climb, etc. for extended periods of time. Must be able to fit into tight spaces for extended periods.
