Lead Line Cook

Bar Pazzo is a chef-driven restaurant in downtown Scranton, Pennsylvania. We blend traditional Italian techniques with modern American seasonality, producing everything from handmade pasta and wood-fired Neo-Neapolitan-inspired pizzas to hand rolled pasta, and locally sourced proteins and vegetables.

Our menu changes with the seasons, and we believe every dish should have a story. We work closely with regional farms and producers whenever possible and focus on thoughtful technique rather than unnecessary complexity.

Position

We are seeking an experienced Chef de Partie/Lead Line Cook to join our team.

This is not an entry-level position.

The ideal candidate has experience in a scratch kitchen, can independently own a station, works cleanly under pressure, and understands that great food begins with exceptional mise en place.

Responsibilities

• Own and maintain a station during prep and service.
• Execute dishes consistently to established standards.
• Prepare fresh ingredients using proper knife skills and techniques.
• Maintain exceptional organization and cleanliness throughout each shift.
• Communicate effectively with chefs and teammates.
• Assist with receiving, storage, labeling, and rotation of products.
• Follow all food safety and sanitation procedures.
• Contribute to a positive, respectful kitchen culture.
• Help train newer cooks when appropriate.
• Maintain quality while working efficiently during busy service.

Qualifications

• Minimum 3 years experience in a full-service scratch kitchen preferred.
• Strong understanding of classic cooking techniques.
• Comfortable cooking meat, seafood, vegetables, pasta, and sauces.
• Excellent knife skills.
• Ability to multitask while remaining organized.
• Strong work ethic and reliability.
• Ability to receive feedback and continually improve.
• Team-first attitude.
• Passion for Italian cuisine is a plus but not required.
