We are looking for an experienced Assistant Head Baker to help lead our bakery production program, support our talented team, and uphold the quality and consistency that define the WINNER brand.

This is an ideal opportunity for a skilled bakery professional who enjoys mentoring others, improving systems, and working alongside a passionate team in a high-volume, scratch bakery.

As Assistant Head Baker, you'll partner closely with the Head Baker to oversee daily bakery operations and ensure consistent execution across bread and pastry production. Responsibilities include:

• Support daily production of artisan breads, viennoiserie, and pastry while maintaining the highest quality standards.
• Lead, coach, and develop bakers, shift supervisors, and production staff.
• Train and onboard new team members while reinforcing WINNER's production standards and techniques.
• Help organize production schedules, priorities, and shift execution.
• Assist with recipe testing, product development, and menu rollouts.
• Improve production systems, workflow, organization, and communication.
• Maintain food safety, sanitation, FIFO, allergen, and labeling standards.
• Monitor inventory, minimize waste, and communicate ordering and equipment needs.
• Serve as the senior bakery leader on duty when assigned and support multiple WINNER locations as needed.

• Minimum 5 years of professional bakery experience in artisan bread, pastry, or high-volume production.
• Previous leadership experience as a Lead Baker, Sous Chef, Assistant Head Baker, or similar supervisory role.
• Strong knowledge of fermentation, dough production, baking techniques, and quality control.
• Excellent organizational, leadership, and communication skills.
• Passion for coaching and developing bakery teams.
• Experience with recipe development, documentation, and production systems is a plus.
• NYC Food Protection Certificate (or ability to obtain within 30 days).
• Bilingual English/Spanish is a plus.
• Ability to lift up to 50 lbs. and work early mornings, weekends, and holidays.
