Mike's Red Tacos

Mike's Red Tacos is looking for experienced restaurant leaders who are passionate about training, developing people, and opening great restaurants.

As a New Restaurant Opening (NRO) Leader, you'll travel across the United States leading the training and execution of new Mike's Red Tacos restaurants. You'll work alongside franchise partners, restaurant leaders, and opening teams to ensure every restaurant launches with the food quality, hospitality, speed, and operational excellence that define our brand.

When not supporting restaurant openings, you'll work from our Pasadena Corporate Store & Training Center, helping maintain best-in-class operations, supporting training activities, and staying connected to the restaurant environment that serves as the foundation for all Mike's Red Tacos standards.

This is one of the most impactful roles in the company. Every successful opening starts with great leadership, and our NRO Leaders set the tone for every new restaurant we open.

What started as a single food truck has grown into one of the most exciting emerging brands in the restaurant industry. With more than 200 locations under development, Mike's Red Tacos is bringing the Love of Red to communities across the country.

Our Corporate Store & Training Center serves as the operational model for the brand, while our New Restaurant Opening Team helps bring that standard to every new location we open.

• Lead and oversee New Restaurant Openings from training through launch
  
• Coach, support, and develop NRO Trainers
  
• Train restaurant teams to Mike's Red Tacos standards
  
• Ensure excellence in food quality, hospitality, cleanliness, and speed of service
  
• Execute training plans, opening schedules, and operational standards
  
• Partner with franchisees, restaurant leadership teams, and support staff
  
• Identify operational challenges and implement solutions in real time
  
• Create a high-energy, organized, and professional training environment
  
• Ensure restaurants are fully prepared for a successful grand opening
  
• Communicate progress, opportunities, and results to company leadership
  
• Support restaurant operations and training activities at the Pasadena Corporate Store & Training Center between openings
  

✔ Strong restaurant operations experience

✔ Proven leadership and team development experience

✔ Experience coaching and training team members

✔ Ability to lead multiple stations and departments within a restaurant

✔ Excellent communication, presentation, and leadership skills

✔ Strong organizational and problem-solving abilities

✔ Ability to thrive in fast-paced, high-pressure environments

✔ Professional, dependable, and team-oriented mindset

✔ Bilingual English/Spanish skills are a plus, but not required

✔ Ability and willingness to travel extensively

• Travel throughout the United States supporting restaurant openings
  
• Company-paid airfare, hotel accommodations, and travel expenses
  
• Flexible schedule including mornings, evenings, weekends, and holidays
  
• Extended shifts and overtime expected during restaurant openings
  
• Typical opening assignments range from 2–3 weeks onsite
  
• When not traveling, NRO Leaders work from our Pasadena Corporate Store & Training Center supporting restaurant operations, training activities, and ongoing team development
  

• Ability to stand and walk for extended periods
  
• Ability to work in a fast-paced restaurant environment
  
• Ability to bend, reach, and work in tight spaces
  
• Ability to lift and carry up to 50 pounds
