Construction company needs a business logo design

Create a professional logo for Highland Construction, a construction company based in San Diego. The main element should be a realistic, hand‑sketched mascot of a Highland Cow's head only (no full body). The style should be between a sketched/pencil‑drawn image and realistic and detailed image, but not cartoonish, not overly simplistic, and not super crisp/digital/photorealistic. Keep it contained and elegant, suitable for business use. Position the text 'Highland Construction Co' underneath the cow head or in a visually pleasing arrangement. Optionally incorporate subtle mountain silhouettes in the background if it enhances the design without overwhelming it.
