The AM Line Cook is responsible for preparing and executing lunch service with precision, consistency, and efficiency while maintaining the highest culinary standards established by Chef Michael White. This position plays a vital role in daily mise en place, station organization, food quality, and teamwork to ensure every guest receives an exceptional dining experience.

Essential ResponsibilitiesFood Preparation

• Prepare all menu items according to Chef Michael White's recipes, specifications, and presentation standards.
• Complete daily mise en place before service begins.
• Prepare sauces, vegetables, proteins, pasta, seafood, and other ingredients for lunch service.
• Ensure consistency in portioning, seasoning, cooking temperatures, and presentation.
• Maintain quality while executing dishes during a fast-paced service.

Station Management

• Set up, organize, stock, and maintain assigned station.
• Monitor inventory throughout the shift and communicate product needs to supervisors.
• Rotate products using FIFO (First In, First Out).
• Label and date all food products according to company standards.
• Keep workstations clean, organized, and fully stocked throughout service.

Food Safety & Sanitation

• Follow all HACCP, local health department, and food safety regulations.
• Maintain proper food storage and temperature controls.
• Practice safe knife handling and equipment operation.
• Maintain a clean and sanitary workstation at all times.
• Assist with opening and closing cleaning duties.

Teamwork

• Work collaboratively with chefs and fellow cooks to ensure smooth kitchen operations.
• Communicate effectively during service.
• Support other stations when needed.
• Maintain a positive, professional, and respectful attitude toward all team members.

Quality Standards

• Inspect ingredients for freshness and quality.
• Ensure every dish leaving the kitchen meets MIKA's presentation standards.
• Maintain urgency without sacrificing consistency or attention to detail.
• Take pride in producing food that reflects the restaurant's culinary philosophy.

Qualifications

• Minimum 2 years of line cook experience, preferably in upscale or fine dining restaurants.
• Experience working with seafood, fresh pasta, and Mediterranean cuisine is preferred.
• Strong knife skills and knowledge of classical cooking techniques.
• Ability to multitask under pressure.
• Understanding of food safety and sanitation procedures.
• Ability to work efficiently as part of a professional kitchen team.
• Reliable attendance and punctuality.

Physical Requirements

• Stand and walk for extended periods.
• Lift and carry up to 50 pounds.
• Bend, reach, kneel, and work in confined kitchen spaces.
• Work safely around hot surfaces, sharp equipment, and commercial kitchen machinery.
• Ability to work in a fast-paced environment.

Schedule Expectations

• Morning and lunch shifts, including weekends and holidays as business demands.
• Ability to arrive early for station setup and remain until assigned closing duties are completed.
• Flexibility to assist with prep production or special events as needed.
