Position Summary
Fortu is seeking a dedicated, detail-oriented Line Cook to join our culinary team. Working under the direction of the Executive Chef and Sous Chef, the Line Cook is responsible for the preparation and execution of dishes at an assigned station to Fortu's exacting standards. This is a hands-on role for a cook who takes pride in consistency, cleanliness, and craft, and who thrives in a fast-paced, high-quality fine-dining environment.
Key Responsibilities- Prepare and cook menu items at an assigned station (grill, sauté, garde manger, fryer, or prep) to recipe and presentation specifications.
- Complete daily mise en place and station setup before each service, ensuring all ingredients are prepped, portioned, and ready.
- Execute dishes consistently and efficiently during service while maintaining quality, taste, and plating standards.
- Follow all recipes, portion controls, and plating guidelines as directed by the Sous Chef and Executive Chef.
- Maintain a clean, organized, and sanitary station throughout the shift and complete closing duties and deep-cleaning tasks.
- Properly label, date, store, and rotate (FIFO) all food products to ensure freshness and minimize waste.
- Communicate clearly with the kitchen team and expeditor to keep service running smoothly.
- Adhere to all Florida Department of Health and Pinellas County food-safety and sanitation regulations.
- Operate kitchen equipment safely and report any maintenance or safety issues to a supervisor.
- 1–2 years of line cook or relevant kitchen experience, preferably in a fine-dining or high-quality, high-volume restaurant.
- Working knowledge of cooking techniques, knife skills, and station fundamentals; interest in or exposure to Asian cuisine is a plus.
- Culinary training or certificate from an accredited program is a plus but not required.
- Ability to follow recipes and instructions precisely and maintain consistency across every plate.
- Strong work ethic, reliability, and the ability to stay organized and composed under pressure.
- A team-oriented attitude and willingness to learn and grow within the kitchen.
