What You'll Do

• Prepare fresh sushi, sashimi, specialty rolls, nigiri, and other Japanese dishes according to established recipes and quality standards.
• Select, inspect, and properly handle fresh fish, seafood, rice, vegetables, and other ingredients.
• Slice fish and other ingredients with precision to ensure consistent portions and professional presentation.
• Prepare sushi rice, sauces, garnishes, and daily ingredients for service.
• Create visually appealing sushi presentations while maintaining consistency in flavor, freshness, and quality.
• Maintain a clean, organized, and efficient sushi station throughout each shift.
• Follow all food safety, sanitation, and proper food-handling procedures.
• Monitor ingredient freshness, rotate inventory, and minimize food waste.
• Work closely with kitchen team members to ensure timely, accurate order preparation during busy service periods.
• Maintain knives, cutting boards, equipment, and other tools in excellent condition.
• Assist with inventory management, ingredient preparation, and restocking as needed.
• Contribute ideas for new rolls, menu improvements, and creative sushi presentations when appropriate.
• Deliver consistent food quality and help create an outstanding dining experience for every guest.

What We're Looking For

• Previous experience as a sushi chef, sushi cook, or Japanese cuisine cook is preferred.
• Knowledge of sushi preparation techniques, including rolling, cutting, rice preparation, and presentation.
• Familiarity with fish and seafood handling, ingredient quality, and freshness standards.
• Strong knife skills and attention to detail.
• Understanding of food safety, sanitation, and proper storage procedures.
• Ability to work efficiently in a fast-paced restaurant environment.
• A team-oriented attitude, reliability, and a strong work ethic.
• Pride in preparing high-quality food and maintaining consistent standards.
• Willingness to learn new techniques, improve culinary skills, and take on additional responsibilities.
• Ability to stand for extended periods and safely handle kitchen equipment and supplies.
