SUSHI & RAW BAR CHEF OPPORTUNITY AT THE SHORE AND COUNTRY CLUB

The Shore and Country Club is currently seeking an experienced Sushi & Raw Bar Chef to join our culinary team for the 2026 season. This position requires evening, weekend, and seasonal availability.

The Sushi & Raw Bar Chef reports directly to the Executive Chef and Sous Chef and is responsible for the preparation, execution, and presentation of all sushi, sashimi, and raw bar offerings during a la carte service, special events, and private functions. This role requires precision, consistency, and a strong commitment to food quality, freshness, and presentation standards.

KEY RESPONSIBILITIES

Duties include, but are not limited to:

• Prepare sushi, sashimi, and raw bar items to order with attention to freshness, portion control, and presentation standards.
• Maintain a clean, organized, and fully stocked sushi/raw bar station throughout service.
• Ensure proper handling, storage, and rotation of seafood and perishable ingredients in accordance with food safety standards.
• Monitor inventory for sushi and raw bar items, communicate shortages, and assist with daily prep needs.
• Maintain strict food safety, sanitation, and cleanliness standards in compliance with health codes and Club policies.
• Assist with the setup and breakdown of the sushi/raw bar station before and after service.
• Collaborate with the culinary team to ensure smooth, efficient service during high-volume periods.
• Execute sushi and raw bar components for special events and banquets as directed by the Executive Chef.
• Uphold consistency, quality, and presentation standards at all times.

CANDIDATE QUALIFICATIONS

• 2+ years of experience as a Sushi Chef or Raw Bar Chef in a high-volume restaurant, hotel, or club environment.
• Strong knowledge of sushi preparation techniques, knife skills, and seafood handling.
• Understanding of food safety standards specific to raw fish and seafood handling.
• Ability to work efficiently under pressure in a fast-paced, team-oriented environment.
• Strong attention to detail, consistency, and presentation.
• Positive attitude, professional demeanor, and strong communication skills.
• Culinary training or sushi certification is a plus, but not required.
• Flexible availability, including nights, weekends, and holidays during the Clubs operating season.
• Passion for culinary excellence and high-quality ingredients.

PHYSICAL REQUIREMENTS

This position requires the ability to perform essential job functions, including standing for extended periods, reaching, bending, and the ability to lift up to 50 pounds.
