Servers, Server Assistants & Captains — Delphine Brasserie (Ace Hotel NoMad) Delphine is hiring Servers to join our opening service team at the Ace Hotel NoMad, delivering polished French brasserie service in one of the city's most anticipated new rooms. Breakfast/AM availability is our priority need. We're looking for servers with real fine-dining chops who can run a flawless sequence of service and still make a regular feel like they just walked into their favorite neighborhood room. You read tables, pair wine with confidence, and keep pacing tight all night.

What You'll Do:

• Guide guests through a complete sequence of service, from greeting to graceful close
• Learn the menu inside and out and make genuine recommendations, not scripted ones
• Build real relationships with regulars: names, tables, usual orders
• Communicate constantly with the kitchen and bar to keep pacing tight
• Handle POS, checks, and payment accurately and confidently

Job Requirements:

• Fine dining or upscale full-service serving experience
• Confident wine knowledge and real menu curiosity
• Polished, warm, professional demeanor
• Evening and weekend availability
• Team-first attitude

Compensation & Benefits:

• AM: $18-20/hr plus tip pool (10 points) · PM: $11.35/hr plus tip pool (10 points)
• Expected average with tips: $35~50/hr (based on projections of average ticket price and comparable NYC concepts)

Head Server / Captain

Delphine's Head Server is the floor's anchor - a server first, with the judgment and presence to run the room. You carry a full section while keeping eyes on the whole floor: pacing, standards, and the team around you. You set the tone for service, mentor servers and bussers, and work directly with Chef Brodie and management to make every night land.

What You'll Do:

• Carry a full section with flawless steps of service while overseeing the floor's flow, pacing, and energy
• Lead on the details that matter: table touches, timing, and recovery when something goes sideways
• Mentor and train servers, bussers, and runners, and bring new hires up to Delphine's standard
• Run pre-shift: communicate the night's priorities, 86s, VIPs, and large parties
• Partner with Chef Brodie and management on service standards, sequencing, and guest experience
• Handle escalations and difficult guest situations with calm and authority
• Own your section's side-work and opening/closing duties, and hold the team to the same bar

Requirements:

• 3+ years of high-volume or fine-dining serving experience, with real steps-of-service fluency
• Previous experience leading a floor, training staff, or mentoring junior servers
• Deep wine, food, and beverage knowledge - you guide, not recite
• A calm, authoritative presence that guests trust and staff want to follow
• NYC Food Protection Certificate, or willingness to obtain one before start date
• Evening and weekend availability

Compensation:

• $11.35/hr plus tip pool (12 tip points, more than our regular Servers' 10)
• Expected total compensation: $40-55/hr with tips
• Staff meals and dining discounts across all three Ace Hotel NoMad venues - Lobby Bar, Delphine, and Libera
• A ground-floor leadership role on a brand-new opening team, with a real path upward
